Another Family Favorite Remembered

Each time I have "date night" with KLB we have this little dance we do. It is called the Dance of Two Indecisives. It goes something like this.

Me: What are we going to eat on Wednesday?
KLB: I don't know, what do you want to eat?
Me: I decided on pizza last time.
KLB: I decided which pizza to bake first.
Me: Oh, don't start. I will smack you.
KLB: Go ahead. I am not scared.
Me: So, what are we going to eat?

And on it goes. Every week. Even though the first two weeks she didn't have to think of anything. I brought freezer meals. (Remember? I do. I have the posts to prove it.) But that isn't good enough for me to get a pass from having to participate in the planning of the weekly meal. Last night the dance lasted about 30 minutes via chat with KLB finally mentioning Nutty Chicken Cubes. I love Nutty Chicken Cubes. The meal is easy and delicious and all too often forgotten. So, since KLB mentioned it, I know next time we gear up for the dance her lead will be, "I thought of Nutty Chicken Cubes. Remember? I do. You have the post to prove it." I think I can maybe get a pass next week because Moo will be joining us for the last time, I will make her decide. I am her mother, so I can do that.

**Well as it so happens since I started the writing of this post, KLB had to cancel our "date night" so the dance was all for naught. At any rate, I am sharing the recipe with you today.

Nutty Chicken Cubes

1 Tbsp oil
2 stalks celery, sliced
1 onion, chopped
2 chicken breasts, cut in chunks or strips
2 Tbsp soy sauce
1 Tbsp sugar
3 Tbsp water
1/2 cup cashews

Cook celery and onion in half of the oil till crisp tender, about 3-5 minutes. Remove from pan. Cook chicken in remaining oil. Add veggies back to pan. Mix soy sauce, sugar, and water; add to pan. Stir in nuts and heat through. Serve with rice.

++Broccoli is delicious with this either on the side or mixed in.

Moo baked a Chocolate Puddle Bottoms Up Cake and I made whipped cream to go with it. I will share those recipes later this week.
