Healthy & Hearty Chicken Quinoa Stew
I am constantly on the lookout for recipes that include quinoa. I have a difficult time finding recipes that my family will enjoy. When I saw this one I knew it was worth a try. It smelled divine while it was simmering. It tasted as good as it smelled. While I am sure russet potatoes would work, the texture of the Yukon Gold potatoes is wonderful in this stew. The soup made quite a bit and after three of us eating we were able to freeze enough for another meal for all of us--I like that.
The Breadsticks of Life
Moo brought this recipe home from a church activity and I am sure it was tied to a lesson of one sort or another. . . even without knowing that I have to say these breadsticks *could* be the breadsticks of life. They are spectacular. We ask Moo to make them whenever we have soup. They are light and fluffy but can hold up to being dunked in soup. You might want to make a double batch if you have breadstick lovers in your house. . . our family of five can eat one batch without trying too hard.
French Breakfast Puffs
Every so often I like to make something a little different for breakfast. You know. . . get away from the traditional eggs and toast, pancakes, waffles, etc. These were great. Everyone enjoyed them. They had a great combination of sweet, but not too sweet (or PE wouldn't have enjoyed them), crispy, buttery flavor. The leftovers reheated beautifully as well.
Refried Beans
I have tried my hand at refried beans before and they were okay. I wanted them to be better. Not only was I not getting the flavor I wanted but I wasn't getting the texture either. This recipe helped me accomplish the texture and with a little added seasoning I accomplished a flavor we really liked.
I now interrupt this recipe report for a little side story: In PE's family cookbook there is a recipe for refried beans. I was reminded of this as perusing the cookbook. I was also reminded of my opinion of the recipe when I saw it four or so years ago. "Who would want to make refried beans?!? You can purchase them at the store for less than $1 (usually). That is a silly recipe." Boy how times have changed. There are *so* many things I make now that I would have never thought to make two or three years ago.
Copycat Lawry's Taco Seasoning
I really enjoy the flavor of the Tone's Taco Seasoning we purchase in bulk. The price is great too. I don't enjoy all the ingredients I can't name. Since we are nearing the bottom of the container, I figured I would try finding a delicious substitute. This was okay. Good in a pinch as in when I don't have something else. But not good enough to quit purchasing the stuff from the store. I couldn't place my finger on what wasn't there so I am just going to have to keep trying. . . good thing I don't mind.
Italian Cream Cake
This lovely *cough cough* was Jabba's birthday cake. She LOVED it. I thought it was pretty good. It has coconut and coconut is not my favorite. That said, it doesn't have an overpowering coconut taste but enough that it wasn't my favorite. I enjoyed making it. It was pretty easy and the cake did what it was supposed to. When I made the frosting, I thought I would have a ton left over. Nope. It was just enough. The frosting had a great flavor. Even though it wasn't my favorite, I will probably make this again.
Creamy Hot White Chocolate
I know. I know. It is spring. Why am I posting this? Because it is delicious and if your spring is like my spring then a warm beverage isn't too far off the mark right now. It is a delightful change from the regular ol' cocoa based hot chocolate.

Recipe Report - March 28
I am only recapping two recipes this week because a thing bigger than that just came to my attention. That thing is Bug's ACT score. That kid is s.m.a.r.t. He scored a 35 on his ACT. That would be out of 36 (just in case you didn't know). Yup. We have a smart kid. Okay so I contributed nothing to his DNA but that doesn't mean I can't be SUPER proud of him and claim him as my kid. Way to go Bug!!!
We will continue on with the Bug theme since the two recipes are from his birthday dinner.
Taco Casserole
This is his favorite meal. He asked for it last year as well. Everyone in the family enjoys it. The green beans, corn, and tomatoes are all to taste. For the green beans and corn you can use fresh, canned, or frozen. This is so versatile that you can modify the vegetables to your liking. (Don't like green beans? Add carrots instead.) Have fun with it and enjoy.
Peanut Butter Chocolate Molten Cake
Bug requested chocolate molten cake. I decided to change it up a bit with the addition of peanut butter. I mean really . . . how could you go wrong? Chocolate and peanut butter together are always enjoyed in this house. It was delicious! Everyone enjoyed it. PE even ate it . . . he does not enjoy the regular chocolate molten cake.--too chocolaty or something. I served it with vanilla ice cream. Yummy, yummy, in my tummy! Bug loved it and did not have a preference one over the other.

The Dinosaur Graveyard (wait for it. . .)
This year for Bob's birthday I wanted to try my hand at fondant. I asked what he wanted on his cake about a month before his birthday so I could play with the idea and figure out the best way to make the cake look decent and meet his expectations. Bob decided he wanted dinosaurs on a rectangular cake with grass, sky, and clouds. Sounded simple enough.
I figured I could make the grass with green fondant and the sky with blue fondant by simply having the green on the bottom part of the cake and blue on the top part. I could cut out a template and make white clouds to layer on the blue and use some cookie cutters to cut out the dinosaurs. Simple, right? Not so much.
One Friday early in August I decided to make Marshmallow Fondant (recipe below) for me to practice with and for the kids to play with. The making part went okay. Only "okay" because I didn't read the directions I just went on my friend's directions of, "One package of marshmallows, a little water, and then about two pounds of powdered sugar." The problem being, my idea of a little water was a teaspoon or two and the real directions call for two tablespoons plus more if necessary. Additionally, I forgot to grease the bowl. That was almost more detrimental than the lack of water. In the end, it worked out fine and I made mental notes of what to do when I made the fondant for Bob's cake at the end of the month.
I let Moo and Bob pick the colors of the fondant and then gave them both a ball in each color. Here is the fondant we practiced with.
Here is one observation. . .Rolling fondant sort of sucks. It rates right up there with rolling dough for pies, rolls, tortillas, etc. I am not good at getting consistent thickness throughout the entire rolled medium be it dough or fondant. After this experience, I purchased this small fondant rolling pin. Notice the rings. . . they are guides to help achieve desired thickness.
There is a bigger one but I figured since this was my first cake with fondant I would see how it went before I purchased too many fondant specific tools. The cookie cutter idea was good and Bob decided he also wanted his name on the cake so I planned on that. Over the course of the following weeks, the more I thought about it the more I began to doubt my abilities to make a nice looking cake. In addition to my lack of confidence, Bob threw a wrench into the whole thing when we went shopping for plates for the cake.
We had picked out dinosaur plates and napkins and were wandering around the store when Bob saw a pirate goblet and a treasure box. He asked if he could have those for his birthday to go with dinner, for around $2 total I figured why not. Then he spotted some "freaky" pirate plates and decided he wanted those plates instead of the dinosaur plates. Due to the change I asked if he wanted a pirate cake instead and he said he still wanted a dinosaur cake." Pirates and dinosaurs. . . that kid makes me laugh.
The day of his birthday arrives and we are at the store purchasing a couple ingredients and as we are wandering I see a package of dinosaurs that included rocks and trees. I grabbed those and decided to put those on the cake in place of cutting out dinosaurs with cookie cutters. Then as we were passing the party supplies I saw they had a pirate goody bag kit. Awesome! I could give Bob and his two little friends some pirate booty.
Back at home I got back to work making the stuff for his cake. I made one chocolate layer using this recipe that I used for Moo's cake last year and for the other layer I made Homemade White Cake (recipe below). Each cake had enough batter for one 9-inch round cake and 12 cupcakes. I frosted the cake and some of the cupcakes with Buttercream Frosting (recipe below). I frosted the remaining cupcakes with the Best Cupcake Frosting Ever (that is the name that came with the recipe but it is pretty accurate). Even though I have posted a VERY similar recipe, I had to try this one because Ree (The Pioneer Woman) posted about it on the Tasty Kitchen blog and I feel like I just can't fail when I use her directions. I was not disappointed.
All the baking went pretty well other than I cannot for the life of me bake the Hershey's Chocolate Cake/cupcakes without them sinking in the middle. Last year the same thing happened so I am not quite sure what I do wrong. It still tastes good and that is all that matters (that is what I have to keep telling myself anyway). Also, the white cake baked with a raised middle so I just assembled the cake with the middles together and it worked out fine.
For your enjoyment, I actually took a couple "during" photos this time. Here is the cake with the frosting.
Here it is with the fondant.
Here it is with the dinosaurs on it. (I fought with myself over whether to post it with his name but it really made it quite ugly when I used my limited PhotoShop skills to remove it.)
Stopping there would have been great; however, it was killing me to have the dinosaur and pirate theme not incorporated together. So here is what the finished product looked like.
Craptasticness struck with this photo. (What do you really expect from the camera on my phone?) But as you can see I put some of the booty from the pirate grab bags on his cake. To the right of the cake you can see his sparkler "6". He LOVED the whole thing. He called it the dinosaur graveyard cake. I laughed and laughed over how silly it was but the important thing is . . . he thought it was "awesome".
I would make everything again. I will be trying my hand at fondant again, I think there are a lot of possibilities there. I liked the white cake but I am going to try making it with butter instead and see if it turns out the same--I prefer using butter over using shortening but since I hadn't made the cake before, I followed the directions. While the kids enjoyed the fondant on the cake or plain, PE and I picked it off and just enjoyed the cake with the buttercream frosting.

Marshmallow Fondant
adapted from Annie’s Eats
Print Recipe
vegetable shortening, for greasing bowls, utensils, and work surface
16 oz. bag plain marshmallows
2 Tbsp water, plus more if necessary
1 tsp vanilla extract
1 tsp almond extract
2 lbs. confectioners’ sugar, divided
pinch of salt
Using the shortening, grease a large microwave-safe bowl and a spoon/spatula (or two). Add the marshmallows and water to the prepared microwave-safe bowl and microwave for 60 seconds. Stir with the greased spatula/spoon. If not all the marshmallows have melted, microwave for 30 more seconds. Stir in the flavoring. Add half confectioners’ sugar along with the salt to the marshmallow mixture and stir with spatula; combining slightly. Pour mixture onto greased silicon mat or counter. Using greased hands, mix marshmallow and powdered sugar mixture until fully incorporated. Add all but 1 cup of the remaining confectioner’s sugar and continue to knead until fully combined. If necessary add remaining 1 cup of confectioner’s sugar 1/3 cup at a time until it is no longer sticky. Turn the fondant out onto a piece of plastic wrap. Rub a bit of shortening on the outside of the ball. Wrap tightly with the plastic wrap, place it in a Ziploc bag and let rest for at least 2-3 hours. Keep the unused portions covered when not in use. If the fondant becomes stiff, microwave for 20 seconds at a time until it becomes pliable. To add color place desired amount of fondant on silicone mat or plastic wrap. Slightly flatten the fondant and place food coloring in the center. Fold the edges of the fondant over the food coloring and continue to mix until color is evenly distributed.

Best Cupcake Frosting Ever
adapted from Tasty Kitchen
Print Recipe
1 cup milk
5 Tbsp flour
1/2 tsp double strength vanilla
1/2 tsp food coloring
1 cup butter
1 cup granulated sugar (not Powdered Sugar!)
In a small saucepan, whisk flour into milk and heat, stirring constantly, until it thickens. Remove from heat and let it cool to room temperature. Stir in vanilla and food coloring. While the mixture is cooling, cream the butter and sugar together until light and fluffy. Then add the cooled milk/flour/vanilla mixture and beat until it all combines and resembles whipped cream. Frost cake or cupcakes. *I used the double strength vanilla so I could use liquid food coloring. The liquid contributed from the liquid food coloring can effect how the frosting whips. I recommend using gel food coloring if you want to color the frosting.

The Story of K2's Last Birthday Cake in L Town
K2 is moving at the end of the month. So we have been having a month of lasts around the office. (K2's last time emailing an agenda. K2's last time printing calenders for the scheduling book. K2's last time doing this and doing that.) K2's last birthday in L Town was last week so I had to make her last birthday cake in L Town.
I have had the plan for months to bake her a carrot cake. She has mentioned several times that she really enjoys carrot cake, even if it may only be because it has cream cheese frosting. I have never made carrot cake before but I figured it was not going to be difficult. The hardest part was going to be choosing which recipe to try. I had a lot of recipes to choose from (12 total - 6 cake, 4 cupcakes, and 2 cookies). Some had nuts, some didn't, some had pineapple, some didn't. Nuts I have eaten in carrot cake, pineapple. . . I wasn't sure. Then the heavens opened up and the angels started singing as in my reader appeared Sigrid's Carrot Cake posted by Ree (The Pioneer Woman). I have commented several times on how awesome Ree is. This should make a believer out of you. (Yes, I know it happened to me and not you but since I know all of you live vicariously through me since I lead such an exciting fun-filled life it is LIKE it happened to you so you should now be a believer too.)
Since cupcakes are easier to serve than cake I made cupcakes. Cupcakes are once again the bane of my existence. Seriously, when I removed the cupcakes from the oven, the top looked sort of like a cake. Grrrr. . . So I scraped the spilled out part of the cupcakes back into the individual cupcake papers because with out that part there was hardly anything in the cupcake paper. Needless to say, after doing that the cupcakes looked like ass. Even the fact that they tasted delicious was not going to overshadow the fact that they looked like total ass. Icing was not going to help the matter. So I made a cake. (What?! Wouldn't you do the same?) The cake (and cupcakes) were delicious. They were moist and the cream cheese icing was perfect.

Sigrid's Carrot Cake
from The Pioneer Woman
Print Recipe
2 cups sugar
1 cup vegetable oil
4 whole eggs
2 cups all-purpose flour
1/2 tsp salt
1 tsp baking soda
1 tsp baking powder
1 tsp ground cinnamon
2 cups grated carrots
Icing:
1 stick regular butter, softened
1 pkg (8 oz) cream cheese
1 lb powdered sugar
2 tsp vanilla
1 cup pecans, chopped finely
Mix together the sugar, oil and eggs in a large bowl. In another bowl sift together flour, salt, baking powder, baking soda and cinnamon. Add to first mixture and combine. Then add carrots and mix well. Pour into a greased and floured pan (bundt, sheet cake, 9 x 13 baking dish) and bake until done, 25 to 50 minutes, depending on the pan you use. Cool completely. Prepare the icing: In larger bowl, cream butter and cream cheese. Add sugar and vanilla and blend, then mix in the nuts. Spread on cooled carrot cake.

Aaaaannnnd We're Back
During my absence Bug hit a pretty big milestone. He turned 16. As we never know how long he is going to want to stay we sort of winged it as far as the festivities. Okay so there really weren't many festivities but Moo and I made him his choice of meals for the day.
While I had offered to make Aebleskivers he opted for Moo making him German Pancakes. Then we had a mid-afternoon dinner because we weren't sure when Bug's mom would be coming to get him. For the dinner I made The Pioneer Woman's Lasagna, Parmesan Brussels Sprouts, garlic bread, and Molten Chocolate Cake with Whipped Cream.
The Lasagna was as good as the first time I made it and really made his evening and the Molten Chocolate Cake fit Bug's request for a fudgy chocolate cake.

JR Strikes Again
Oh how I love when JR comes to visit! We always have such a great time chatting. We laugh, bitch, and laugh some more. I also enjoy cooking for my single friend. It gives me a chance to try new recipes and hopefully make his tummy happy. For dinner, PE and I decided to make Barbecue Pulled Pork. That is all the help he was because he wasn't going to be home most of the day anyway. PE was playing Hunting W. that day as it was the last week of the season.
Here is how my Saturday went. JR was going to arrive around 12:00 p.m. and I didn't want to spend my time baking/cooking while he was visiting so I got out of bed around 6:30 (our cute little puppy's bladder is such a great alarm). First thing we did was eat breakfast. Then while PE rubbed the pork roast (for the Barbecue Pulled Pork) with Secret Rib Rub I made Honey Barbecue Sauce. After the sauce was complete, I poured it over the roast in the slow cooker and the roast was ready to be forgotten about for the rest of the day. Then Hunting W. left to go hunting.
While I love hanging out with PE on weekend mornings I didn't mind his early departure as I had stuff to do. I started by making Sandwich Roll dough. As the dough was going through three rises (yes, three) I made Banana-Oatmeal Chocolate Chip Cookies (a double batch to take to parenting class on Sunday) and Bacon and Ranch Pasta Salad. Somewhere in the middle of that I separated the dough and made the rolls and let them rise while I finished baking the cookies. Once the cookies were finished I baked the rolls. While the rolls were baking I made Red Velvet Pound Cake batter and straightened the kitchen/dining area. Once the rolls were finished I placed the cake in the oven to bake and left Moo in charge of removing it from the oven while I showered and got ready for the day since it was 11:00 a.m. and JR would be there in about an hour. Moo did a bang up job of makng sure the cake was done before removing it from the oven (she is turning into such a good little (not so little) baker's helper).
Everything turned out great! I finished getting ready just in time for JR's arrival and we wasting no time departing my house to go eat lunch (I did enough for dinner, I didn't need to make lunch too). The rest of the day was relaxing and none pressured other than my no cream cheese moment I had when I went to glaze the cake with a cream cheese glaze. You cannot make cream cheese glaze without cream cheese. Once I remember that I used it all For Super Bowl recipes, I made the decision to make a Brown Butter Glaze. So delicious! Just as good on Red Velvet Pound Cake as it was on the Bananas and Cream Bundt Cake.
The Sandwich Rolls were delicious and reheated well. Even with the three rises they weren't too troublesome to prepare. I will make them again. The Barbecue Pulled Pork was fabulous! The leftovers are great and the meat even tastes quite delicious cold. The Bacon and Ranch Pasta Salad was so good that PE ate the little bit of leftovers the next morning for breakfast.

Sandwich Rolls
from The Way the Cookie Crumbles
Print Recipe
4 cups (19.2 ounces) unbleached all-purpose flour, plus
2 tsp instant yeast
2 Tbsp granulated sugar
1 tsp salt
1 1/2 cups water
2 Tbsp olive oil
2 Tbsp milk for brushing the rolls
Stand mixer: Mix the flour, yeast, sugar, and salt in the bowl of a stand mixer fitted with the dough hook. With the mixer on low speed, gradually add the water and oil. Continue mixing on medium-low until the dough is elastic and supple, about 8 minutes. You may need to add a little more flour or water to get the correct consistency – soft but not really sticky. Transfer the dough to an oiled bowl and cover with plastic wrap. Refrigerate overnight. By hand: Mix the flour, yeast, sugar, and salt in a large bowl. Make a well in the middle of the dry ingredients and pour in the water and oil. Stir the mixture until the dough comes together. Transfer it to a floured board or counter top and knead, incorporating as little flour as possible, for about 10 minutes, until the dough is elastic and supple. You may need to add a little more flour or water to get the correct consistency – soft but not really sticky. Transfer the dough to an oiled bowl and cover with plastic wrap. Refrigerate overnight. Remove the dough from the refrigerator and let it warm and rise at room temperature until it’s double the original volume, 2-4 hours (depending on the temperature of the ingredients you started with and the room temperature). Give the dough one turn, by folding it into thirds like a sheet of paper going into an envelope, than in half the other direction (as shown in the photos). Allow the dough to rise again, which should take about an hour. Give it another turn, then let it rise again, which will probably take less than an hour. Once the dough has doubled in size for the third time, cut it into 12 pieces. Very gently pull the edges of each dough ball around to one side and pinch them together, as shown in the photos above. Roll the dough between the palm of your hand and a board, lightly floured if necessary. Place the formed rolls, pinched side down, on 2 baking pans lined with parchment paper or silicone baking mats.

Slacker Face. . .That is Me
For the Super Bowl we went over to Cooking W.'s house and had a great time watching the game & commercials, visiting, and eating. Cooking W. and I left for a couple hours (right in the middle of the game) to attend a parenting class. Whoever planned that parenting class must not watch football or go anywhere in the world where there is football/sports stuff because who plans the first night of a parenting class the night of the Super Bowl? Then the following week is Valentine's Day. Great planning there. . . . Anyway, it worked out okay especially after I recovered from the tablecloth being crooked and not being able to do anything about it.
For the get together I made Chicken Enchilada Roll-Ups, Spicy Sausage Dip, Cream Cheese Sheet Cake, and Shortbread Fruit Pizza (recipes below). SS made 7-Layer Dip, Fresh Salsa, Crab Dip (with fresh crab), Chicken Salad type stuff baked on Pitas, and Chocolate Chip Cookies (sorry, no recipes).
The Chicken Enchilada Roll-Ups were enjoyed by everyone. PE really liked them. The Spicy Sausage Dip I left pretty mild for all the kids so I did not add any hot sauce. The Cream Cheese Sheet Cake was better cold than it was room temperature. I really like the crust of the Shortbread Fruit Pizza. I haven't had fruit pizza for awhile but most I have had just had a simple sugar cookie base, the flavor of the shortbread was refreshing.

Shortbread Fruit Pizza
adapted from The Tasty Kitchen
Print Recipe
2 cups all-purpose flour
1/2 cup brown sugar
1/4 cup powdered sugar
1 cup butter, softened
12 oz, weight cream cheese, softened
1/2 cup sugar
1 tsp vanilla
2 whole kiwis, peeled and sliced
2 cups frozen mixed berries
Mix the flour, brown sugar, powdered sugar, and butter together with a mixer until it forms a ball. Press onto the bottom of a well-greased pizza pan. Bake at 350 for 10-15 minutes until the top is golden. Cool well. Beat cream cheese, sugar, and vanilla together; spread over cooled crust. The fruits listed in the ingredients are just suggestions. Use whatever fresh or frozen fruit you like, arranged however you like, onto of the cream cheese topping. If not serving immediately, you can glaze the fruit with 1/2 cup of apricot jam warmed with 1 tbsp water – lightly brush over the fruit and refrigerate until ready to serve.
NOTE: The crust and topping can be prepared up to 2 days ahead. Just cover the crust and put the topping in a sealed container until ready to use. Don’t put the topping on the crust until you are ready to assemble the pizza, as the crust will start to get soggy.

Spread a thin layer of the filling mixture over a tortilla, leaving a small border clear around the edge. Roll the tortilla up tightly into a spiral. Refrigerate filled tortillas until firm. Place the rolled up tortilla on a cutting board and use a sharp knife to cut into 1- to 1½-inch thick segments. Transfer to a serving platter and serve chilled or at room temperature.

The PW Strikes Again (In a Good Way as Usual)
Last week I went to SS's house for a little crafty crap making and I offered to make a treat to share. I have many recipes that I want to make at some point but the decision to make the Perfect Pound Cake from The Pioneer Woman was easy. I also wanted to take something chocolate and that was a bit more difficult to decide on. I ended up just making Homemade Chocolate Milk Mix for the Refrigerator (also from The Pioneer Woman) because I didn't want to spend a lot of time on the second recipe. Before heading over to SS's house I had a glass of chocolate milk and decided I might have to start keeping the refrigerator stocked with the stuff from now on.
Instead of having chocolate milk we served the chocolate sauce over the cake and it was a big hit (I preferred the cake plain).

1 cup heavy whipping cream
3 oz weight semi-sweet chocolate pieces
1 oz weight white chocolate pieces
Heat cream over medium-high heat until slightly boiling. Add chocolate pieces and turn off heat. Whisk slowly until chocolate is melted and mixture is very smooth. Pour into a container and keep in the fridge up to two weeks. Mix with cold or warm milk, depending on how frightful the weather outside is. Mixture, after refrigerated, will be quite thick. Just stir well in cold milk and you’ll be fine.

The Tale of the Third Cake
I really wanted to make the Cookies & Cream Cake; however, I did not want it sitting around my house. So, when Cooking W. told me my niece had been asking when they would be going to my party I said, "Well. . .you cook dinner and I will bring the cake. See you this evening." That is what happened. Cooking W. made a delicious soup with potatoes, spicy sausage, bacon, and kale (I will try to get the recipe). She also had fresh bread to go with it.
The cake was fabulous; very moist and chocolaty. The filling was fluffy and delicious (how can you go wrong with Oreos). The frosting was VERY rich. As long as you ate the frosting with some filling and cake in the same bite it was great but it was too rich (for me) to eat plain. Next time I make this cake I will play with making it less rich. Everyone enjoyed the cake. I left three pieces at Cooking W.'s house and they were eaten that same night.

Cookies & Cream Cake
from Annie's Eats
Print Recipe
2 cups sugar
1 3/4 cups all-purpose flour
3/4 cup cocoa powder
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 tsp vanilla extract
1 cup boiling water
Filling:
1 1/4 cups heavy cream
1/8 cup confectioners’ sugar
1/4 tsp pure vanilla extract
10 chocolate sandwich cookies, chopped
Frosting:
1/2 cup unsalted butter
2/3 cup cocoa powder
3 cups confectioners’ sugar
1/3 cup milk
1 tsp vanilla extract
Preheat the oven to 350. Grease and flour two 9-inch round baking pans. Stir together the sugar, flour, cocoa, baking powder, baking soda and salt in a large bowl. Add eggs, milk, oil and vanilla; beat on medium speed for 2 minutes. Stir in boiling water (batter will be thin). Pour batter into prepared pans. Bake 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely.
To make the filling, in the bowl of an electric mixer fitted with the whisk attachment, combine the heavy cream, confectioners’ sugar and vanilla. Beat on low speed until all sugar is incorporated; increase speed to high and whisk until stiff peaks form. Gently fold in chopped cookie pieces with a rubber spatula.
To make the frosting, melt the butter in a medium bowl. Stir in the cocoa. Alternately add confectioners’ sugar and milk, beating to spreading consistency. Add small amount additional milk, if needed. Stir in vanilla.
To assemble the cake, place one cake layer on a cardboard cake circle. Pipe a ring of the chocolate frosting around the outside edge of the cake. Fill the area inside the ring of frosting with a thick layer of the cookies and cream mixture. Place the second cake layer on top. Frost the sides of the cake layers with chocolate frosting. Pipe a decorative border of the chocolate frosting on top of the cake. Fill the area inside this border with a thick layer of the cookies and cream mixture. Garnish with extra chocolate sandwich cookies and whipped cream if desired.

The Tale of Two (Maybe Three) Cakes
What do you do when you are the baker in your house and your birthday comes around? I guess if you are me, you bake yourself two (might turn into three) cakes. Why?
The three cakes I couldn't choose among are Tres Leches, Red Velvet, and Cookies & Cream. The two that won (for now anyway) are Tres Leches and Red Velvet. I will be taking them to work and then I will make the Cookies & Cream Cake on Friday or Saturday.
Thankfully the Tres Leches Cake is baked in a 9 x 13 pan and topped with whipping cream--no need for beautiful presentation. I should have placed it on a rimmed platter but since I don't own one I just left it in the pan. That will suffice. Now the Red Velvet Cake is a different story as it is a 2-layer cake. PE helped me cut a cardboard circle and I covered it with tinfoil to make it look a little better. I put the cake on it and even put scraps of wax paper under the edge of the cake so I wouldn't get frosting on the cardboard circle. The frosting was the difficult part. PE purchased me an angled spatula so I could have a better chance of making the frosting look good. It helped but I sure wish I could have made it look better. Oh well, it's my birthday and I'll slack if I want to.
Update: The cakes were a big hit at work. I received the nicest compliment. . . "This might be the best Red Velvet cake I have ever eaten. . . and I have eaten a lot of cake." That was a pretty cool present in and of itself.

Red Velvet Cake
from Annie's Eats
Print Recipe
2 eggs
1 1/2 cups sugar
1 1/2 cups vegetable oil
1 tsp white vinegar
2 1/2 cups cake flour*
1 tsp baking soda
3 tbsp cocoa powder
1 cup buttermilk
1 tsp vanilla
5/8 ounce bottle red food coloring
Preheat the oven to 350. Butter the pan and line the bottom of two 9-inch round cake pans with parchment paper. Cream the eggs, sugar, oil and vinegar. Sift the cake flour, baking soda, and cocoa together. Add the flour mixture to the creamed ingredients while beating. Slowly add the buttermilk. While still beating, add the vanilla and the food coloring. Pour into prepared cake pans and bake for about 25 minutes. When toothpick inserted in center comes clean, the cake is done. Cool the cakes in their pans on a wire rack for 10 minutes. Place a wire rack on top of the cake pan and invert, lifting off the pan. Frost the cooled layers, assemble and frost the top and sides. Serves 12 to 14.
Frosting
1(8 oz) package cream cheese
1/2 cup butter
4 cups powdered sugar
1 tsp vanilla extract
Combine the cream cheese and butter in a small mixing bowl and soften in the microwave. Add the confectioners’ sugar and vanilla and mix well. If the frosting becomes too thick, add a little milk. Frost one 8-inch or 9-inch layer cake.
*Cake Flour Substitute: For each cup of cake flour place 2 Tbsp cornstarch in 1 cup dry measuring cup. Fill cup with flour.

Print Recipe
1 cup all-purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
5 whole eggs
1 cup sugar, divided
1 tsp vanilla
1/3 cup milk
1 can evaporated milk
1 can sweetened, condensed milk
1/4 cups heavy cream
Icing
1 pint heavy cream, for whipping
2 Tbsp sugar
1/4 cup powdered sugar
Preheat oven to 350. Spray a 9 x 13 inch pan liberally until coated. Combine flour, baking powder, and salt in a large bowl. Separate eggs. Beat egg yolks with 3/4 cup sugar on high speed until yolks are pale yellow. Stir in milk and vanilla. Pour egg yolk mixture over the flour mixture and stir very gently until combined. Beat egg whites on high speed until soft peaks form. With the mixer on, pour in remaining 1/4 cup sugar and beat until egg whites are stiff but not dry. Fold egg white mixture into the batter very gently until just combined. Pour into prepared pan and spread to even out the surface. Bake for 35 to 45 minutes or until a toothpick comes out clean. Turn cake out onto a rimmed platter and allow to cool. Combine condensed milk, evaporated milk, and heavy cream in a small pitcher. When cake is cool, pierce the surface with a fork several times. Slowly drizzle all but about 1 cup of the milk mixture—try to get as much around the edges of the cake as you can. Allow the cake to absorb the milk mixture for 30 minutes. To ice the cake, whip 1 pint heavy cream with 3 tablespoons of sugar until thick and spreadable. Spread over the surface of the cake. Cut into squares and serve.

- Because you want to make delicious desserts and not eat all of them.
- Because you couldn't decide which ONE cake you wanted to make--you choose to make two (maybe three).

Dinner with Place B Friend
Five years ago we moved about an hour from Place B to be closer to my parents in Place R. Since moving I have dearly missed the friends I gained during my time in Place B. When I am lucky I have the privilege of those friends coming to my house to visit. A couple weeks ago one of those friends, JR, came to see us. In the hopes that I would have a fallback if the conversation was lacking (on our part) I tried to make a delicious meal that would bring him back. I figured I couldn't go wrong with recipes from The Pioneer Woman. I made Meatloaf, Creamy Mashed Potatoes with Roasted Garlic, and Chocolate Sheet Cake all from my new cookbook and/or The Pioneer Woman Cooks website, The Pioneer Woman Cooks: Recipes from an Accidental Country Girl. I love this cookbook. The photos, the colors, the Pioneer Woman. . .
The Creamy Mashed Potatoes were just as fabulous as the last time we made them although next time I will put a pan under them so the butter burning in the bottom of the oven doesn't stink up the delicious smell of the Meatoaf. The meatloaf was good and I will make it again; however, Meatloaf al a PE is better. The Chocolate Sheet Cake was very chocolatey. I have another recipe I use (PE's mom's) and it uses less cocoa which PE prefers but I will definitely make Ree's cake again.

Meatloaf
adapted from The Pioneer Woman & The Pioneer Woman Cooks: Recipes from an Accidental Country Girl
Print Recipe
1 cup milk
6 bread slices
2 lbs ground beef
1 cup grated Parmesan cheese
1 tsp salt
1/4 tsp seasoned salt
freshly ground black pepper
1/8 to 1/4 dried parsley
4 eggs
8 to 12 slices thin bacon slices
Tomato Gravy
1 1/2 cups ketchup
6 Tbsp brown sugar
1 tsp dry mustard
dash or two fo hot sauce
Preheat oven to 350. Pour milk over the bread and allow to soak for several minutes. Place the ground beef, milk-soaked bread, Parmesan cheese, salt, seasoned salt, black pepper, and parsley in a large mixing bowls. Pour in the eggs. With clean hands, mix the ingredients until well combined. Form the mixture into a loaf shape on a broiler pan, which will allow the fat from the meat to drain (line the bottom of the broiler pan with foil to aide in cleanup). Lay bacon slices over the top tucking them underneath the meatloaf. Next make the tomato gravy. Poour the ketchup into a small mixing bowl. Add the brown sugar and dry mustard and splash in the hot sauce. Stir the mixture until well combined. Pour one-third of the tomato gravy over the top of the meatloaf. Bake for 45 minutes, then pour another one-third of the remaining tomato gravy over the meatloaf. Bake for an additional 15 minutes. Serve with the remaining tomato gravy on the side of a dripping sauce.

I made two desserts to take to a friend's house. I made Mississippi Mud Cake and Cinnabun Cake. The last time I made the Cinnabun Cake, I couldn't get enough of it. It was so delicious. This time; however, it was not as good. I am not quite sure what I did wrong. It might be because I didn't follow the directions as closely as I should have. . .oh well, it happens.

3 cups flour
1/4 tsp salt
1 cup sugar
4 tsp baking powder
1 1/2 cups milk
2 eggs
2 tsp vanilla
4 Tbsp butter, melted
2 sticks butter, softened
1 cup brown sugar
2 Tbsp flour
1 Tbsp cinnamon
2/3 cup nuts, optional
2 cups powdered sugar
5 Tbsp milk
1 tsp vanilla
In an electric or stand mixer mix the flour, salt, sugar, baking powder, milk, eggs and vanilla. Once combined well, slowly stir in melted butter. Pour batter into a greased 9 x 13 inch baking pan. In a large bowl, mix the 2 sticks of softened butter, brown sugar, flour, cinnamon and nuts until well combined. Drop evenly over cake batter by the tablespoonfuls and use a knife to marble/swirl through the cake. Bake at 350 for 25-30 minutes or until toothpick comes out nearly clean from center. Place powdered sugar, milk and vanilla in a large bowl. Whisk until smooth. Drizzle over warm cake. Serve warm or at room temperature.

If I Only Had a Little Flower Pot for the Center of the Bundt
I purchased some buttermilk while it was on sale and I wanted to get it used so I decided to make a cake. (Yes, I could have froze the buttermilk but I didn't want to since I have some from already frozen. We don't need the cake but boy is it tasty. I did give half of it to Cooking W. and her family so at least we won't eat the entire thing. I was sad to have the center sink but I am going to blame it on Bob and his cousin running around like crazies. Got a problem with that? I don't.
This cake is delectable. The caramel icing is delicious (not as high up there as the brown butter frosting but still high up there).

Thansgiving Contributions
We joined PE's family at his sister's house for Thanksgiving. Of his six siblings and their families only one niece was missing from the get together--that is amazing. We had a great time hiding in the corner visiting. The kids really enjoyed seeing their cousins. Our contributions to the dinner were Sweet Potatoes, Petite Corn with Wild Rice, Cream Cheese Cranberry Cake, and Honey Butter (in separate post).
The Sweet Potatoes are always a big hit. The leftovers reheat nicely. The Petite Corn with Wild Rice was a new dish and it was a nice change. I will make it again. The Cream Cheese Cranberry Cake was a hit too! The combination of the lemon with the cream cheese was wonderful. It remained moist for several days after.

Sweet Potatoes
adapted from The Pioneer Woman
Print Recipe
4 whole medium sweet potatoes
1 cup sugar
1 cup milk
2 whole eggs
1 tsp vanilla extract
1 tsp salt
1 cup brown sugar
1 cup pecans, chopped
1/2 cup flour
3/4 stick butter
Preheat oven to 375. Wash sweet potatoes. Peel and cut sweet potatoes into large pieces. Bake until fork tender, about 30-35 minutes. Add sugar, milk, eggs, vanilla extract and salt. With a potato masher, mash them up just enough—you don’t want to be perfectly smooth. In a separate bowl, combine brown sugar, pecans, flour, and butter. With a pastry cutter or fork, mash together until thoroughly combined. Spread the sweet potato mixture into a regular baking dish and sprinkle the crumb mixture all over the top. Bake in a 400-degree oven for 30 minutes, or until golden brown.

Petite Corn with Wild Rice
adapted from The Pioneer Woman
Print Recipe
2 cups cooked wild rice
3-4 cups frozen petite corn
1 cup heavy cream
6 Tbsp butter
2 whole eggs beaten
1-2 tsp kosher salt
cayenne pepper to taste
1/2 - 1 cup milk, for thinning
Preheat oven to 350 degrees. Cook wild rice according to package directions until almost done (use chicken broth or a mixture of chicken broth and water). Rice should still have a firm (but not crunchy) bite. Drain rice and allow to cool. Pour corn kernels into a large mixing bowl. Add in cream, butter, beaten eggs, salt and cayenne pepper. Stir together. Add in cooled wild rice, stirring gently. Splash in milk so that mixture is stirrable, but not overly juicy. Taste for seasonings, adding more salt or cayenne pepper if needed. Bake for 30-45 minutes, or until just turning golden brown on top and the mixture is somewhat set.

National Bundt Day
When I ran across a blog post featuring National Bundt Day I figured the timing was perfect to make this Bananas & Cream Bundt Cake with Brown Butter Glaze. A couple weeks ago I purchased some "Manager's Special" bananas just for baking. While I have been waiting for them to turn brown, PE has been eating them. Each time I would catch him I would give him crap. Did he stop? No! Luckily I still had three left which was perfect for making the cake.

One Down Three to Go
I finally have the last of my cards complete and in the mail. Now I just have to finish up the swap I hosted. The last cards should be here today and I can get them mailed out. I can't even fully express how happy I am to be free of that obligation. Even with having to finish up the cards I was able to cook everything on my list (all recipes are below).
Friday Moo and I made White Velvet Sugar Cookies with Whipped Cream Cheese Frosting. We took them over to KLB's for a girls night with her and JB (KLB's sister). I was also supposed to take some of the pumpkin chocolate chip bread from the bakery; however, that wasn't going to work out so instead of just not taking some, I made Mini Pumpkin Chocolate Chip Bundt Cakes with Cinnamon Cream Cheese Drizzle. Why those? Because the bundt cakes took 14 minutes to cook and the bread would have baked for 50 or so.
Over at KLB's we ate Nutty Chicken Cubes, Brown & Serve Rolls, Muddy Buddies that KLB made, the desserts we made and we watched Sweeny Todd and The Strangers. We all had a fun night.
On Saturday I made Pumpkin Bread Bowls, Clam Chowder, Crispy Rice Candy Corn Treats, and a Chocolate Chip Cheese Ball. I needed a break from making cards so I made everything. PE helped with the cooking of the Clam Chowder. Nana joined us at A1's house for dinner. A1 made Cheesy Cheddar Broccoli Soup and an Artichoke Something or Other appetizer (she doesn't follow recipes or I would share). Everything was delicious.
As for the title of the post . . . one holiday (Halloween) down and three (Thanksgiving, Christmas, and New Year's) to go. Oh, how I hate these three months.

White Velvet Sugar Cookies
from My Kitchen Cafe
Print Recipe
2 cups butter, softened
1 (8 oz) pkg. cream cheese, softened
2 cups sugar
2 egg yolks
1 tsp vanilla
4 3/4 cups flour
Cream butter and cream cheese until light and fluffy. Add sugar, egg yolks and vanilla; mix well. Gradually add flour. The dough will be VERY soft; don't worry, it gets firmer after chilling. Cover and chill two hours or until firm. Roll out on floured surface to ¼ inch thickness. Cut into shapes; place on greased baking sheets (or use parchment paper). Bake at 350 degrees for 10-12 minutes or until set (but not browned). Cool 5 minutes. Place on wire racks to cool. Frost as desired.

Whipped Cream Cheese Frosting
from My Kitchen Cafe
Print Recipe
1 (8 oz) package cream cheese, softened to room temperature
1 1/2 cups powdered sugar
1/8 tsp salt
1 tsp vanilla
1 1/2 cups heavy whipping cream
In a large bowl combine cream cheese, sugar, salt and vanilla. Beat until light and fluffy. Set aside. In another medium bowl, beat whipped cream until stiff peaks form (it helps to use a chilled bowl and chilled beaters - and make sure the peaks are stiff not soft). Fold whipped cream into cream cheese mixture and mix carefully (so as not to deflate cream) but well. Frost to your heart's delight! (Be careful if adding coloring - the liquid food coloring found in the baking aisle can quickly thin your icing so you may need to add a bit more powdered sugar to compensate. I prefer to use Wilton's gel coloring but either will work.)

Pumpkin Bread Bowls
from Everyday Food Storage
Print Recipe
2 Tbsp instant yeast
1/4 cup sugar
2 cups warm water
4 tsp salt
1/4 cup oil
6 1/2 cups whole wheat or white flour
yellow, red, and green food coloring
1. In a large bowl, dissolve the yeast and sugar in the warm water. Add the salt, oil, and flour and combine.
2. Knead the dough on a floured tabletop, adding more flour if needed, until it is smooth and elastic but not sticky or soft.
3. Place the dough in a lightly greased bowl, turn it over once, then cover with plastic wrap. Let the dough rise just until it has doubled in bulk (about 1 to 1 1/2 hours).
4. Punch down the dough. Divide the dough into four portions, and remove a small piece of dough from each portion for the stems.
5. Shape each pumpkin by grasping the dough from the bottom, stretching it upward, and gathering it on the top. Repeat this process until you have a uniform ball. Then firmly pinch together the gathered dough in the center and turn over the ball. Now gently squeeze the middle of the pumpkin to make it stand as tall as possible.
6. Place the pumpkin on a parchment-paper-lined sheet pan. Grease one end of a toothpick and insert it into the dough stem so that it protrudes an inch from the top. Stick the other end into the pumpkin top. Then cover each pumpkin with plastic wrap and let it rise to twice its size.
7. Uncover the risen dough. Holding the stem, slowly twist the toothpick to loosen it but don’t remove it.
8. In a small bowl, mix 2 tablespoons of water with 30 drops of yellow and 6 drops of red food coloring. Transfer a half teaspoon of the mixture to a small saucer and stir in a drop of green food coloring.
Use a small pastry brush to paint the stem green (the brush should not be too wet). Gently apply a coat of orange to the globe using a larger brush and long, soft strokes. Let the paint dry for about 2 minutes.
With a sharp knife, lightly score the dough to create the pumpkin’s vertical grooves (adults only).
9. Heat the oven to 375 degrees and bake the bread until it sounds hollow when you tap the crust, about 35 to 40 minutes.
10. Set the pumpkin on a cooling rack and twist the toothpick to remove it. If the crust seems soft, cool the bread completely, then bake it for another 5 to 10 minutes.
Before serving, slice off the top of the pumpkin and pull out the bread from the inside, leaving the bowl about 1” thick on the sides and bottom. Fill with soup.
++The bread bowls can be made the day before.
++I used my stand mixer to knead for 10 minutes and skipped the first rise in step #3.

1/2 tsp cloves
1/2 cup butter, at room temperature

Blueberry Boy Bait aka Blueberry Cake
Finished off the evening with this yummy cake. I can't rave enough about it. The batter, the smell as it was baking, and the taste. . .all of it, fab.u.lous!
Blueberry Cake
adapted from Jenny Mac's Lip Smack
Print Recipe
2 cups plus 1-teaspoon all-purpose flour
1 Tbsp baking powder
1 tsp table salt
16 Tbsp unsalted butter (2 sticks), softened
3/4 cup packed light brown sugar
1/2 cup granulated sugar
3 large eggs
1 tsp vanilla
1 cup buttermilk
1/2 cup blueberries, fresh or frozen
Topping
1/2 cup blueberries, fresh or frozen
1/4 cup granulated sugar
1/2 tsp ground cinnamon
Preheat to 350. Grease and flour 13 X 9 pan. Whisk two cups flour, baking powder, and salt together in medium bowl. With electric mixer, beat butter and sugars on medium-high speed until fluffy, about two minutes. Add eggs, one at a time, beating until just incorporated and scraping down bowl. Add the vanilla and mix until incorporated. Reduce speed to medium and beat in one-third of flour mixture until incorporated; beat in half of milk. Beat in half of remaining flour mixture, then remaining milk, and finally remaining flour mixture. Toss blueberries with remaining one-teaspoon flour*. Using rubber spatula, gently fold in blueberries. Spread batter into prepared pan.
For the topping:
Scatter blueberries over top of batter. Stir sugar and cinnamon together in small bowl and sprinkle over batter. Bake until toothpick inserted in center of cake comes out clean, 45 to 50 minutes. Cool in pan 20 minutes. Serve warm or at room temperature.
*Coating the blueberries (or fruit in general) with flour prevents the fruit from sinking to the bottom.
++I love the batter. It is so light and fluffy.

Birthday Meals
The morning started with Aebleskivers (recipe below) for the birthday girl. Then we picked up KLB and went to get Moo's hair cut. It turned out so cute! We got the idea and pictures from here. She now looks older than her 14 years and her dad has grounded her until she is 30. (We aren't looking forward to beating off the boys. I see a father sitting on the couch cleaning his guns in Moo's future.)
After stopping by PE's work for the birthday girl to show off the new do and for KLB to sell some jewelry (you can see some of her creations here.) Then we went home where I started baking and Moo watched movies and played around on Facebook. All was going well until Nana canceled because she has a cold and was not feeling well and then KLB canceled because she was not feeling well. (I wish the best to both of them and hope they are feeling better soon.) Moo decided that since KLB wouldn't be around to watch SYTYCD and Glee with us that she would reconsider Cooking W.'s invitation to attend the football game (I guess the boys and I aren't good enough company). Not a big deal, but she did leave in the middle of dinner and now I have an uncut cake in my refrigerator. There is always tonight.
Let us get on with the recipes.

Perfect Cupcake Frosting and Filling
from ourbestbites.com
Print Recipe
3 Tbsp Flour
1/2 cup milk
1/2 cup real butter
1/2 cup granulated sugar
1 tsp vanilla extract, or other flavor if you wish.
Whisk together the flour and the milk. Heat in a small sauce pan on medium heat. Whisk continuously until it starts to thicken. Let it cook, while stirring, until it looks like pudding (you should be able to see the bottom of the pan when you stir it). Even though it's thick, pour it through a mesh strainer (just whisk the mixture in the strainer to push the thick stuff through) and then let it cool completely to room temperature or chill it in the fridge. It needs to be cooled completely. If it isn't cooled completely, it will melt the butter and the frosting will be runny. In an electric stand mixer with whisk attachment(s), beat the butter and the sugar for a minute or two until well combined and fluffy. Then while beating, add in the thickened milk mixture and the vanilla. Beat on the highest speed without it spraying all over the place for 7 minutes. Yes, 7 whole minutes, maybe even 8 or 9--that's when the magic happens! Use it to fill cupcakes or other pastries, or as a frosting on top. One batch makes enough to frost 12 cupcakes with BIG tops or it will frost 24 if spreading a little on top.
++DELICIOUS!! This is going to used a lot in my house from now on. It is so worth the work.

I also served Crescent Rolls frozen from earlier in the week. I actually forgot about the rolls until I started the potatoes, so I had to modify their defrosting and baking. They were supposed to defrost all day. Instead I placed them in the slightly warm oven (leftover warmness from baking the cake and cupcakes) while I started to prepare the potatoes. Midway through preparing the potatoes, I turned the oven on to preheat. After four minutes I removed the rolls from the oven and placed them on the stove top to finish defrosting/rising while the potatoes baked. Once the potatoes finished I baked the rolls as directed in the recipe and they turned out just as good as the fresh rolls.
