This had a great flavor even though the consistency was not optimal. I didn't let it thaw completely before putting it in the slow cooker and I didn't get it in as early as I should have so I turned it on high and it resulted in the cheese not incorporating as well into the liquid. It sort of was like runny soup with cheese lumps instead of a creamy cheesy soup. Again, I have to say it had great flavor so I will make it again.

Slow Cooker Cheesy Potato Soup
from Once a Month Mom
Print Recipe
3 cups chicken broth
2 lbs frozen 0'brien hashbrowns
1 1/2 tsp salt
3/4 tsp pepper
3 cups milk
3 cups cheddar cheese, shredded
1/2 cup onions, chopped
2/3 cup celery, chopped
Place all ingredients into slow cooker and cook on low 4-6 hours. Garnish with additional cheese and sour cream if desired.
Freezing Directions:
Do not cook before freezing. Place all ingredients into a gallon sized freezer storage bag, placing the potatoes at the bottom of the bag. Label and freeze. To serve, thaw. Place contents into slow cooker and cook on low 4-6 hours.

Freezer Meal Group - December 2011
Now that I have caught up on my WLB posts, I will catch up on Freezer Meal Group posts. First I will get all of my recipes posted and then I will post the recipes from other group members. I won't be posting all the recipes though because I was sort of a slacker face who was extremely disorganized and misplaced some of them. I will post all the ones I have not misplaced.

Chicken Posole Stew in the Slow Cooker
from Cook at Home
Printable Recipe
4 boneless chicken breasts or the equivalent in tenders
2 cans hominy, rinsed and drained
3 cups chicken broth
2 cans diced tomatoes, undrained
3 carrots, sliced thin
3 green onions, sliced
3 cloves garlic, minced
1 Tbsp cumin
2 tsp chili powder
1 tsp oregano
1/4 tsp cayenne pepper, or to taste
1 tsp salt, or to taste
pepper to taste
Put the chicken in the bottom of the slow cooker. Add the other ingredients on top, stirring to combine. Cook on high 5-6 hours or low 7-8 hours. Remove the chicken and shred with a fork. Return to the pot. Serve with tortilla chips and cheddar cheese, if desired.
To freeze: Combine all ingredients in a zip top freezer bag. Freeze.
To cook: Defrost in refrigerator. Pour contents in to slow cooker and cook as directed above.

To freeze: Cover with plastic wrap and then aluminum foil. Freeze.
To cook: Defrost in refrigerator. Remove foil and plastic wrap. Replace foil and bake at 350 for 30-45 minutes or until heated through.

Recipe Report - April 18 (plus one day)
Healthy & Hearty Chicken Quinoa Stew
I am constantly on the lookout for recipes that include quinoa. I have a difficult time finding recipes that my family will enjoy. When I saw this one I knew it was worth a try. It smelled divine while it was simmering. It tasted as good as it smelled. While I am sure russet potatoes would work, the texture of the Yukon Gold potatoes is wonderful in this stew. The soup made quite a bit and after three of us eating we were able to freeze enough for another meal for all of us--I like that.
The Breadsticks of Life
Moo brought this recipe home from a church activity and I am sure it was tied to a lesson of one sort or another. . . even without knowing that I have to say these breadsticks *could* be the breadsticks of life. They are spectacular. We ask Moo to make them whenever we have soup. They are light and fluffy but can hold up to being dunked in soup. You might want to make a double batch if you have breadstick lovers in your house. . . our family of five can eat one batch without trying too hard.
French Breakfast Puffs
Every so often I like to make something a little different for breakfast. You know. . . get away from the traditional eggs and toast, pancakes, waffles, etc. These were great. Everyone enjoyed them. They had a great combination of sweet, but not too sweet (or PE wouldn't have enjoyed them), crispy, buttery flavor. The leftovers reheated beautifully as well.
Refried Beans
I have tried my hand at refried beans before and they were okay. I wanted them to be better. Not only was I not getting the flavor I wanted but I wasn't getting the texture either. This recipe helped me accomplish the texture and with a little added seasoning I accomplished a flavor we really liked.
I now interrupt this recipe report for a little side story: In PE's family cookbook there is a recipe for refried beans. I was reminded of this as perusing the cookbook. I was also reminded of my opinion of the recipe when I saw it four or so years ago. "Who would want to make refried beans?!? You can purchase them at the store for less than $1 (usually). That is a silly recipe." Boy how times have changed. There are *so* many things I make now that I would have never thought to make two or three years ago.
Copycat Lawry's Taco Seasoning
I really enjoy the flavor of the Tone's Taco Seasoning we purchase in bulk. The price is great too. I don't enjoy all the ingredients I can't name. Since we are nearing the bottom of the container, I figured I would try finding a delicious substitute. This was okay. Good in a pinch as in when I don't have something else. But not good enough to quit purchasing the stuff from the store. I couldn't place my finger on what wasn't there so I am just going to have to keep trying. . . good thing I don't mind.

This lovely *cough cough* was Jabba's birthday cake. She LOVED it. I thought it was pretty good. It has coconut and coconut is not my favorite. That said, it doesn't have an overpowering coconut taste but enough that it wasn't my favorite. I enjoyed making it. It was pretty easy and the cake did what it was supposed to. When I made the frosting, I thought I would have a ton left over. Nope. It was just enough. The frosting had a great flavor. Even though it wasn't my favorite, I will probably make this again.
Creamy Hot White Chocolate
I know. I know. It is spring. Why am I posting this? Because it is delicious and if your spring is like my spring then a warm beverage isn't too far off the mark right now. It is a delightful change from the regular ol' cocoa based hot chocolate.

Recipe Report - April 11
Turnip Slaw
The coop provided us with turnips awhile ago. Since I can't name another time I have eaten turnips, I had to find a recipe for how to serve these. A lot of the recipes were for au gratin style (cheese, cream, etc.). Not that there is anything wrong with that but I wanted a healthier alternative. I settled on this turnip slaw recipe. It was delicious. This was a great way to start out with turnips. Considering PE and I do not generally like cole slaw it was surprising that we both enjoyed it. My Auntie C. REALLY enjoyed it as well.
Sour Cream Noodle Bake
I don't think I need to mention again how much I love the Pioneer Woman but I will anyway. I LOVE Ree! She makes me laugh and she always provides good recipes. This was a big hit. I made it one weekend for lunch. I added a little garlic powder and garlic salt (we love garlic in our house) but other than that I followed her recipe.
Teriyaki Honey Chicken
Oh my goodness was this delicious! I really loved the flavor of this. We cooked it on the indoor grill and I CANNOT wait to grill them outside. My mouth is watering just thinking about it. Oh the deliciousness. We served it with coconut rice. Yummy.
Lentil and Wild Rice Soup
I have heard from several coworkers how delicious lentils are. I had also read about how nutritious they are. So I purchased some then set to work finding recipes. As soon as I saw this one I had to try it. . . .I love wild rice. As it was cooking it smelled so amazing. Even with the fantastic aroma I was a little concerned that PE and Moo might not enjoy it, but they both devoured it.

Freezer Meal Group - March 2010
For the freezer meal swap this month I made Slow Cooker Minestrone Soup. We have not eaten it yet but boy did it smell good!

Slow Cooker Minestrone Soup
adapted from Meal Planning 101
1 onion
2 stalks celery
3 carrots
2 cloves chopped garlic
4 cups vegetable broth, low-sodium (or chicken broth)
1 can diced tomatoes
1 can mixed beans
2 tbsp tomato paste
2 tsp Italian seasoning (or 1 tsp oregano, 1tsp basil)
pepper
1/4 cup grated Parmesan cheese
1/4 cup sun-dried tomato pesto (from a jar)
1 cup macaroni
Finely chop onion and slice carrots and onion and add them to your slow cooker. Chop garlic and add. Gradually add stock, tomatoes, mixed beans, tomato paste, spices, Parmesan cheese, and pesto. If making right away, turn on low heat until dinner (6-8 hours). When almost ready to serve, fill a large stove-top pot with water and season with salt and bring to a boil. When boiling add macaroni and simmer according to package directions. Add to soup and serve.
To freeze: Combine ingredients as directed above. (Can be combined in the freezer bag for fewer dishes.) Keep macaroni separate.
From frozen: Defrost soup. Place in slow cooker and cook on low heat for 6-8 hours. When almost ready to serve, cook pasta for 7-9 minutes; until al dente. Add to soup and serve.

Recipe Report - March 28
I am only recapping two recipes this week because a thing bigger than that just came to my attention. That thing is Bug's ACT score. That kid is s.m.a.r.t. He scored a 35 on his ACT. That would be out of 36 (just in case you didn't know). Yup. We have a smart kid. Okay so I contributed nothing to his DNA but that doesn't mean I can't be SUPER proud of him and claim him as my kid. Way to go Bug!!!
We will continue on with the Bug theme since the two recipes are from his birthday dinner.
Taco Casserole
This is his favorite meal. He asked for it last year as well. Everyone in the family enjoys it. The green beans, corn, and tomatoes are all to taste. For the green beans and corn you can use fresh, canned, or frozen. This is so versatile that you can modify the vegetables to your liking. (Don't like green beans? Add carrots instead.) Have fun with it and enjoy.
Peanut Butter Chocolate Molten Cake
Bug requested chocolate molten cake. I decided to change it up a bit with the addition of peanut butter. I mean really . . . how could you go wrong? Chocolate and peanut butter together are always enjoyed in this house. It was delicious! Everyone enjoyed it. PE even ate it . . . he does not enjoy the regular chocolate molten cake.--too chocolaty or something. I served it with vanilla ice cream. Yummy, yummy, in my tummy! Bug loved it and did not have a preference one over the other.

Recipe Report - March 22 plus 2 days
Again, I apologize for not posting this on Monday. Hopefully the recipe selection below will help make up for it. Enjoy!
Sour Cream Enchiladas
This is yet another wonderful recipe from Ree (The Pioneer Woman). It was pretty simple and very delicious. I made half with corn tortillas and half with flour. They were both good. The addition of chicken would be delicious too.
Cheddar Cheese Soup with Vegetables
I enjoy making this soup. It is a great way to use up vegetables. I have made this several times, each time the vegetables were a little different and each time it was fantastic.
Leftover Mashed Potato Soup
This was a great addition to our soup recipes. It is a good use for leftover mashed potatoes.
Cherry Chocolate Cookies
I have been making these for years and they are always a big hit. I don't particularly like maraschino cherries but I like these cookies. The addition of the almond extract is delightful.
Ellie's Sugar Cookies
These cookies were tasty but not as soft as I would have liked. The almond extract in the dough was perfect to go with the rather plain royal frosting.
Royal Frosting
This was fun to use. The kids and I made some heart cookies for Valentine's Day. I took some to work to share with my coworkers and they were enjoyed.
Sugar Cookies
This is Jabba's sugar cookie recipe that I have been eating for years yet never made myself. They were easy to make and not finicky. These cookies were soft and that is what I prefer in a sugar cookie.
Powdered Sugar Glaze
This glaze played the role of royal icing but had flavor and tasted delicious. I think it was a wonderful choice to pair with Jabba's Sugar Cookies.

Cheddar Cheese Soup with Vegetables
I enjoy making this soup. It is a great way to use up vegetables. I have made this several times, each time the vegetables were a little different and each time it was fantastic.
Leftover Mashed Potato Soup
This was a great addition to our soup recipes. It is a good use for leftover mashed potatoes.
Cherry Chocolate Cookies
I have been making these for years and they are always a big hit. I don't particularly like maraschino cherries but I like these cookies. The addition of the almond extract is delightful.

These cookies were tasty but not as soft as I would have liked. The almond extract in the dough was perfect to go with the rather plain royal frosting.

This is Jabba's sugar cookie recipe that I have been eating for years yet never made myself. They were easy to make and not finicky. These cookies were soft and that is what I prefer in a sugar cookie.
Powdered Sugar Glaze
This glaze played the role of royal icing but had flavor and tasted delicious. I think it was a wonderful choice to pair with Jabba's Sugar Cookies.

He Hated It!
I am a little devastated. This is the first meal I have ever made where PE took one (ONE!!) bite and did not eat any more. "Eh, what is in that? Nutmeg?" I listed the spices, "Allspice, ginger, . . " His so kind response, "Whatever it is, it doesn't belong in soup." And he pushed his bowl away and left the table.
It isn't as though I came up with the recipe on my own or anything. . . I just followed the directions. BUT STILL my feelers are a little hurt. STUPID! That is what that is. What else is stupid? The fact that it diminished my enjoyment of the soup a little. Really! Only a little.
Moo and I enjoyed it. I thought it had a great flavor. It was VERY easy to make. I was excited about that. Who can't use a quick and easy meal to prepare after work? Oh well. I hope someone out there takes this recipe and makes some delicious soup and that everyone in their house will enjoy it. I wish you the best of luck.

Copycat of Rumbi’s Island Grill Bahama Mama Tortilla Soup

2 boneless skinless chicken breast halves
8 cups chicken broth
1/4 teaspoon ground allspice
1/2 teaspoon fresh thyme, chopped or a pinch of dried thyme
1/8 teaspoon ground cinnamon
1 tablespoon fresh ginger, chopped (I used the stuff in a tube)
1 tablespoon garlic clove, minced
1 cup shredded or matchstick carrots (I used the matchstick)
1 cup coconut milk
1 cup chopped tomato
1 cup mozzarella cheese, shredded
2 cups white tortilla strips or crushed tortilla chips (see note below)
1 lime, cut into wedges
salt
Preheat an outdoor or indoor grill for medium heat. Salt and pepper chicken breasts and grill for 6 to 8 minutes per side, or until browned and cooked through. Remove from the grill, and cut into chunks. (You can even purchase already grilled chicken from the store and use that to make this soup even easier.) In a large pot, combine the chicken broth, allspice, thyme, cinnamon, ginger and garlic and bring to a boil. Remove from the heat and add the coconut milk, carrots and chicken. Let it sit for a few minutes to heat the chicken. Get four soup bowls and place 1/4 cup of the tomato in each. Ladle broth mixture into bowls. Top with shredded mozzarella cheese and tortilla strips. Squeeze juice onto soup from lime wedges. Makes 4 bowls.
Note: You can find tortilla strips in your grocery store now. I have seen them in the produce dept, deli dept, or on the chip isle. If not, then crushed tortilla chips will work. They just aren’t as pretty.

Soup, Laziness, and Change of Plans
In sticking with the meal plan I have made quite a few new, relatively easy recipes the past two weeks. Here are three from the past couple of days. There have been a couple of modifications. . .instead of Baked Brown Spanish Rice I made Rice Cooker Spanish Rice and instead of Pepsi Pot Roast we are going to make Pulled Elk (instead of pulled pork). I changed the rice because I was baking Lazy Chiles Rellanos and the temperatures were different and I didn't want to wait for the rice to bake at a lower temperature when it was already supposed to take 80 minutes at a higher temp. We are making Pulled Elk to take to a football shindig at a friend's house on Sunday--plans that arose after I had made the weekly menu.
On Monday I prepped everything for the week. I roasted butternut squash for the Creamy Roasted Butternut Squash Soup. While that was roasting, I blanched spinach and made cream cheese crust for the Spinach Pie (on taps for tomorrow), and prepped for the Chicken Curry (recipe to follow) I was making for dinner that evening by making a cream of chicken substitute. After roasting the butternut squash I roasted the chiles for the Lazy Chiles Rellanos. While they roasted I simmered the squash in broth and blended it with a hand blender then I put it in the refrigerator for later in the week. I then made the Chicken Curry. It was a productive day.
I had received three butternut squash from the co-op over the past month so I tried to find a recipe that sounded like it would take away some of the sweet since that is what PE dislikes about butternut squash. I succeeded (for the most part) with this soup. I didn't blend the squash, onions, and garlic as thoroughly as I could have so he encountered a few chunks that were the sweet he doesn't enjoy but said a little salt nipped that in the bud. The directions are lengthy but that is because they are more detailed. Don't let the length scare you away.
I also received chiles from the co-op this past week and wanted to use them. Once again The Pioneer Woman came to the rescue and I had a delicious recipe bookmarked that was perfect. . . Lazy Chiles Rellenos. I love Chiles Rellenos. I have wanted to make them for quite awhile but didn't know that I cared to make the individual version. So the Lazy in the title of the recipe really spoke to me. It was all I had hoped for. I even had delicious corn tortillas from the co-op to enjoy with that and the Rice Cooker Spanish Rice. The meal was excellent. PE said the leftovers were great too.

Creamy Roasted Butternut Squash Soup

20 oz. butternut squash, cut up into chunks (that’s about 4 cups)
1 large sweet onion
1 clove elephant garlic
1/4 cup olive oil
kosher salt
freshly cracked black pepper
7 fresh sage leaves, minced
4 cups chicken broth
1 cup heavy cream
Preheat your oven to 350. Line a sheet pan with foil and/or parchment paper. Spread cut squash out on your prepared pan. Add the chopped onion to the squash on the sheet pan. Next, peel your clove of elephant garlic. Slice it thinly and sprinkle it over the onion and squash. Drizzle the olive oil over the veggies on your pan. Mix the veggies up with your hands to cover them with olive oil. Sprinkle with kosher salt, freshly cracked black pepper, and fresh minced sage to taste. Pop the pan into your preheated oven. Roast the veggies, stirring a few times during cooking, for about 1 1/2 hours. You want them to slow cook and develop nice, caramelized edges. Transfer the veggies into a large-ish soup pot. Pour in the chicken broth. Turn the heat on to medium-high and bring it up to a simmer. Simmer for about 10 minutes. Check your veggies for doneness. Fish out a larger piece of squash with a wooden spoon. Smoosh it against the side of the pot. If it breaks up, it’s done. If it’s hard and refuses to come apart, simmer the soup for a few more minutes, then try again. If it breaks up easily, keep going. Once your veggies are cooked through, it’s time to puree them. I do this with a handheld stick blender. (If you don’t have one, you can totally use a regular blender. Just transfer and puree the soup in batches to ensure that you don’t overload your blender.) Put the stick blender in the pot. Make sure that the head of the blender is completely submerged, or else you’ll have a splatter fest on your hands. (Remember, your heat should be off at this point.) If you can’t get your stick blender completely submerged, tip your pot a little and use the stick blender in the deep end of the pot. Blend the soup until it’s completely pureed. When you’ve blended up all the chunks of veggies, your soup should be pretty smooth. Add the cream to the pot. Puree the soup again with your handheld blender to combine it. Ladle out into bowls. Garnish with chopped chives.

Lazy Chiles Rellenos

8 whole roasted, peeled, and seeded green chiles (can be canned)
1 1/2 cups Monterey jack cheese, grated
5 whole large eggs
2 cups whole milk
salt and black pepper to taste
1/2 tsp paprika
1/4 tsp cayenne pepper
Preheat oven to 325. Mix together eggs, milk, salt, pepper, paprika and cayenne. Cut chilies in half and add a single layer of chilies on the bottom of a 9 x 13-inch baking dish. Top chilies with half the grated cheese. Repeat with another layer of chilies and another layer of cheese. Pour egg mixture all over the top. Place into a larger baking dish or rimmed baking sheet. Pour in 1/2 inch of water and bake for 35 to 45 minutes, or until completely set.
Cut into squares and serve with warm corn tortillas!

Rice Cooker Spanish Rice

2 cups long grain rice
1 can Rotel tomatoes with green chiles
2 cups chicken broth
1 tsp garlic powder
3/4 tsp chili powder
salt, to taste
Spray rice cooker with cooking spray. Combine all ingredients in rice cooker and stir. Run rice cooker cycle. When the cycle is almost completed check the rice. If necessary, add additional 1/2 cup water. The amount you need will depend on what kind of rice you use.

Panera and Pastor Ryan
When I made the menu plan I knew I would be home on Thursday afternoon so I would have more time than usual to make a more involved dinner. I planned all week on making the Panera Bread's Creamy Potato Soup and Pastor Ryan's Bloomin' Herb Bread. It was delicious. I struggled a little with the bread and will be making it again to see if I can make it better this time. Don't get me wrong it was not a complete failure. . . it tasted great and I enjoyed it (I think everyone else did too). I really enjoyed the soup too. The ground red pepper added a bit of a kick to the soup which was a nice variation to other potato soups I have eaten.

Panera Bread’s Creamy Potato Soup

Print Recipe
6 cups chicken broth
6 cups potatoes, peeled and cubed
1/2 teaspoon seasoning salt
1/4 teaspoon white pepper
1/4 teaspoon ground red pepper
1 (8 ounce) package cream cheese, cut into chunks, room temperature
4 slices bacon, cooked and crumbled (optional)
sharp cheddar cheese, shredded (optional)
Combine broth, potatoes and spices. Boil on medium heat until potatoes are tender. Smash a few of the potatoes to release their starch for thickening. If you like it smooth smash more, if you like it chunky just smash a little of it. You can decide the texture of it. Reduce to low heat. Add cream cheese. Heat, stirring frequently, until cheese melts. Ladle into bowls. Sprinkle a little bacon over each bowl of soup.

Pastor Ryan’s Bloomin’ Herb Bread

20 ounces, weight bread flour (all purpose is okay, too) - About 4 Cups
8 ounces, fluid water
4 ounces, fluid melted butter with chopped herbs of choice (chives, rosemary, or thyme)
2 tsp salt
1 tsp active or instant yeast (if active, it would be best to sprinkle yeast over the water to let it start to work before mixing it in)
Combine all ingredients together in a stand mixer with the dough hook (it can be done by hand…it just takes longer). Mix them together for about 10 minutes or so until a windowpane can be successfully achieved with the dough. This is where you can pull off a small chunk of the dough you’re kneading and stretch it gently to see if it is somewhat translucent. If you can do this without it tearing, it’s ready. Once this elasticity has been achieved, the dough can sit out with plastic wrap over it for 1-4 hours to double in size. After it’s gotten bigger, it should be kneaded for a minute or two so that the yeast can redistribute. Preheat oven to 450. Form it into a dome and place in a covered cast iron pan after coating it with olive oil and a sprinkling of kosher salt. Cut a large ‘X’ into the surface of the bread dough so it can bloom! Bake inside a covered cast iron pan after coating the rounded dough with olive oil and sprinkling with kosher salt. Bake for 30 minutes with the lid on, then remove lid to finish it off for another 15 to 30 minutes (internal temperature should be between 200 and 210).

Freezer Meal Group - December 2010
When I started the freezer meal group I didn't think I had the staying power to continue to do it for 6 months let alone going on 16 months. Now it is to the point where the group coordinator and I are the only two who have not missed a month. I am probably the only one who has noticed but since I have a slight lack of follow through on so many other things I find this quite the accomplishment. However, this accomplishment creates a slight dilemma for me. Now I feel I can't miss a month because I have a pristine record. No one would care one way or the other. Technically I can't say no one. I would care. Why? Who the hell knows--I am a little crazy that way. Sort of the same realm as why I feel guilty when I don't go volunteer at the co-op. Crazy! I know.
Moving away from my crazy and on to the recipe for the current month. I chose to make Chipotle Chicken & Hominy Chowder. It was listed on one site I frequent as a "no cook the day of prep" meal, that is one of the main reasons I chose it. When I went to read the directions more in-depth, I found I was grossly misled. There was a whole crapload of cooking the day of. So I went to the original recipe and sort of winged it and tried to make it as little cooking as possible. I used canned chicken instead of cooking and shredding it that day. I also chose to go with canned diced tomatoes instead of fresh. I also chose to not include a teaspoon of sauce to be added later because the heat will intensify from the soup being frozen. Some of the other modifications I made were simply for that day due to making six meals not just one.
Everyone at my house enjoyed it. It was a nice change from the usual soups I serve. One thing PE and I found is we really enjoy the smell of the chipotle chiles in adobo sauce. It really has the most amazing smell. If it wouldn't burn my mouth up I would eat it plain. We also had enough leftover that we froze that for another meal.

Chipotle Chicken & Hominy Chowder

1 (7 oz) can chipotle chiles in adobo sauce
1 Tbsp extra virgin olive oil

1 tsp ground cumin

1 1/2 lbs skinless, boneless chicken breast, shredded or canned chicken

1 (15.5 oz) can white or golden hominy, drained and rinsed
1/4 cup whipping cream
1 (15.5 oz) diced tomatoes
1/2 tsp salt
lime wedges, cheese, sour cream, and tortilla chips if desired
Remove 1 chile and 1 teaspoon adobo sauce from can; reserve remaining chiles and sauce for another use. Finely chop chile; set chile and sauce aside separately. Heat oil in a large Dutch oven over medium heat. Add chopped chile, onion, and next 6 ingredients (through garlic); cook 7 minutes or until onion is tender, stirring frequently. Stir in broth; bring to a boil. Reduce heat and simmer 30 minutes. Remove pan from heat; let stand 5 minutes. Use an immersion blender to puree mixture in pan. (OR place one-third of broth mixture in a blender; process until smooth. Pour pureed broth mixture into a large bowl. Repeat procedure in two more batches with remaining broth mixture. Return pureed broth mixture to pan.) Stir in cilantro, potatoes, hominy, and chicken. Simmer for 20 minutes or until potatoes are tender. Add tomatoes and whipping cream; simmer for 5 minutes. Serve with shredded cheese, sour cream, tortilla chips, and lime wedges if desired.
OR pour pureed soup mixture, cilantro, potatoes, hominy, and chicken into slow cooker and cook on high for 3 hours or until potatoes are tender. Once potatoes are tender.Add 1/4 to 1/2 cup whipping cream and can of diced tomatoes. Cook an additional 30 minutes. Turn off slow cooker and allow soup to cool a bit. Serve with shredded cheese, sour cream, tortilla chips, and lime wedges if desired.
FOR FREEZING: Combine pureed soup mixture, cilantro, potatoes, hominy, and chicken in gallon freezer bag. Freeze mixture. To cook: defrost gallon bag in refrigerator overnight. Pour into slow cooker. Cook on high for 3 hours or until potatoes are cooked. Add 1/4 to 1/2 cup whipping cream and can of diced tomatoes. Cook an additional 30 minutes. Turn off slow cooker and allow soup to cool a bit. Serve with shredded cheese, sour cream, tortilla chips, and lime wedges if desired.

Food from the Co-Op
I recently started participating in a fruit and vegetable co-op. How it works as quoted from the organization: "Use collective purchasing to get high quality food at prices usually reserved for grocery stores and restaurants. Save money while you work together co-operatively within your community." Each Monday I sign up (and pay) for my "contribution." On Saturday I go to a local location and pick up my produce. It is half fruits half vegetables. In addition to the fruits and vegetables there are other offerings. A few weeks ago I purchased extra strawberries and I made freezer jam and froze some chopped strawberries. This week I purchased the additional "Mexican Food Ingredient Pack."
It is never guaranteed what items you will receive so it has been giving me an opportunity to find try new fruits and vegetables and try new recipes. the best part is the cost. It averages out to about $0.50 per pound. There are very few fruits and vegetables you can purchase in the grocery store for that price. I enjoy the challenge of trying to use everything within the week. If we were eating all of our servings of fruits and vegetables we should have no problem accomplishing that. The key to that sentence is IF. While we try and try it just doesn't always happen. With the weather warming up and the opportunity to grill it will get easier and easier.
Anyway. . . all of that to talk about dinner and dessert tonight. Both weeks we have received celery so I have a lot of celery. In looking for ways to use it (besides eating it raw) I found a Cream of Celery Soup recipe. I served the soup with a romaine lettuce and apple (both from the co-op) salad with Ranch Dressing from the mix I made a couple weeks ago and Roasted Garlic Artisan Bread purchased from a local artisan bread bakery. After dinner PE had a sweet tooth so I decided to find a recipe that would use the blackberries we received from the co-op. I settled on Quick Blackberry Cobbler.
The soup was a little bland but the addition of salt and pepper was all it needed to perk it up. The ranch dressing while delicious was runny. I need to figure out a way to make it thicker. The cobbler was very easy to put together and smelled amazing while it was baking--it didn't taste too bad. Actually it was delicious!

9 oz celery, coarsely chopped
1 1/2 oz carrots, julienned
1 1/2 oz onions, chopped
3 Tbsp all-purpose flour
1/2 tsp salt
1/8 tsp ground white pepper
2 1/4 cups hot milk
3 Tbsp butter
Pour the chicken stock into a large pot, and bring to a boil. Add the celery, carrots and onion to the pot. Whisk together the flour, salt, pepper, and milk; add to the pot along with the margarine. Boil for 10 minutes, then strain out the vegetables by pouring through a sieve, or if the vegetables are large enough, a colander may be used. (I just pulverized my celery and carrots in the blender before adding them to the soup - instead of draining them out - and it worked fine).

Quick Blackberry Cobbler

1 cup self rising flour or substitute*
1 cup sugar
1 cup milk
1 stick butter (1/2 cup)
2 cups blackberries
2 - 3 Tbsp additional sugar (optional)
Preheat oven to 350. Add butter to a 9x9 inch baking pan and place in the oven so the butter can melt. While the butter is melting, mix flour, sugar and milk together. Batter will be a bit lumpy. Remove pan from the oven and pour the batter over the melted butter. Top with blackberries and sprinkle with additional sugar if you like about a couple tablespoons. Do not stir. Cook for 30-40 minutes or until brown on top and the cobbler pulls away from the sides of the pan. Let cool a bit and serve with fresh whipping cream or vanilla ice cream.
*Self Rising Flour substitute: For each cup of flour add 2 tsp baking powder and 1/2 tsp salt.

Super Bowl Chili & Cornbread
I went over to KB's for some quality time with my friend and her psycho dog. Not so much psycho as maybe schizophrenic. One minute he is barking at me the next he is coming up to me to sit by me on the couch, then he is snipping at me as I walk by. We just didn't get it. Most of the time he was fine so long as I didn't move my arms. . . easier said than done especially when you are eating and drinking. He is a cute little chihuahua named Winston and I really don't mind his crazy personality. It makes me laugh that he is SO strange. The frustrating part is that it stresses KB a little because he is so naughty. Oh well, putting up with the crazy is worth the time I get to spend with KB.
When I went over we had Super Bowl Chili and cornbread from the freezer meal swap. The chili was different for me as I haven't had homemade chili that had steak before. The flavor was great. It was a little sweet so I might cut down on the honey if I make it. I really like the flavor the chipotle en adobo added. The cornbread was delicious but the recipe was not included and it was different than the one on the box.

1/3 cup low-sodium beef broth or water
1 cup light beer
2 onions, chopped
2 large carrots, diced
2 portobello mushroom caps, diced
1/4 cup tomato paste
3 garlic cloves, finely chopped
3 Tbsp honey
3 Tbsp chili powder
1 chipotle en adobo, seeded and finely chopped
2 tsp ground cumin
3/4 tsp oregano
1 Tbsp cornmeal
Spray large nonstick skillet with nonstick spray and set over medium-high heat. Add half of beef; cook, turning occasionally, until browned, about 4 minutes. Transfer to 5- or 6-quart slow cooker. Repeat with remaining beef. Add broth to skillet. Pour broth mixture into slow cooker; stir in beer, onions, carrots, mushrooms, tomato paste, garlic, honey, chili powder, chipotle en adobo, cumin, and oregano. Cover and cook until beef and vegetables are fork-tender, 4-5 hours on high or 8-10 hours on low. About 20 minutes before cooking time is up, gradually stir cornmeal into slow cooker until blended. Cover and cook on high until mixture simmers and thickens, about 15 minutes.

Beethoven Was Wrong . . .
when he said, "Only the pure of heart can make good soup." I make some pretty darn good soup (Clam Chowder counts as a soup, right? I kick some serious butt with this Clam Chowder recipe) so I have disproved that saying.
Side note: It is a might sad how far I will go to get a title. Oft times a song title or lyrics from a song inspire me but for soup. . . I had nothing. So I went looking for some quotes and as soon as I saw the one above I was inspired. Maybe that is the sad part.

Meatball Recipe (So Good) & Soup
I received the Salsa Meatballs recipe the other day. You must go make them. NOW! (If you don't want to eat meatballs, read the other options.) Before you can have the recipe I have to tell you about another freezer meal we had recently. We ate Tortellini Soup. It was delicious. We did have to fix it a little after I sort of simmered out most of the water. Oh well, crap happens.

3/4 cup firm packed brown sugar
1 Tbsp Worcestershire sauce
1 tsp salt
1 tsp pepper (adjust this to taste)
1 tsp minced garlic
1 small onion cut into wedges or minced onions)
1 tsp chili powder
1 dried bay leaves
2 1/2 lb chicken or beef
Preheat oven to 350 degrees. Combine all ingredients except the meat. Add meat and coat well. Place meat in deep dish baker or a slow cooker and pour excess sauce over top. Cover with foil and bake for 1 1/2 hours. Uncover and bake another 30 min. This recipe is meant for bone in chicken but can be used for meat of preference.

Place everything except tortellini in slow cooker or stock pot. Heat until bubbling then add tortellini 10 minutes before serving.
From frozen: Defrost overnight in the refrigerator. Heat through. Add tortellini 10 minutes before serving.

Going, Going, Partially Gone
I really hate when I think I write a post and then find out I never did. Go ahead, laugh. It is funny. . .yet concerning at the same time. Funny because, who does that?! Concerning because, I am losing my mind. Wait. . .it was already gone as many of you know.
Anyway, the post I thought I wrote was the one where I went to KLB's and we ate delicious Sausage, Broccoli, & Cheese Turnovers that I made for the November freezer meal swap -- still delicious. While I was over there PE and the kids ate Corn Chowder from the freezer meal swap. This was a little different than the one I posted previously. I never did get any and there was quite a bit of it so it must have been delicious.

Corn Chowder II
from Freezer Meal Swap
Print Recipe
1 lb bacon, chopped
1 medium onion, chopped
8 medium potatoes, peeled & diced
3 cans corn
2 cans condensed milk
Morton Nature's Seasons Seasoning Blend or seasonings of choice
Boil potatoes until soft. Drain. Brown bacon, onion, and seasoning. Drain 1 can of corn (leave juice in other 2 cans). Mix all ingredients together and heat through in the slow cooker or pot.
From frozen: Place in slow cooker or pot (frozen or thawed) and heat through stirring often.

Freezer Meal Group - December
For my freezer meal this month I made Chicken Cordon Bleu Bake. I tried a new Homemade Condensed Cream of Chicken recipe but other than that I followed the recipe linked to above. I made eight meals; seven to trade and one we ate tonight. It was tasty.

Homemade Condensed Cream of Chicken Soup

1 1/2 cups chicken broth
1/2 tsp poultry seasoning
1/4 tsp onion powder
1/4 tsp garlic powder
1/8 tsp black pepper
1/4 tsp salt (or less; taste to test)
1/4 tsp parsley
dash of paprika
1 1/2 cups milk
3/4 cup flour
In medium-sized saucepan, boil chicken broth, 1/2 cup of the milk, and the seasonings for a minute or two. In a bowl, whisk together the remaining 1 cup of milk and flour. Add to boiling mixture and continue whisking briskly until mixture boils and thickens.

Another Delicious Freezer Meal
Last week while at K1's house I cooked Hearty Lasagna Soup from the Freezer Meal Swap. It was easy and delicious. I added a little extra Parmesan cheese to the top. I also made Rice Krispie Treats (let me know if you would like me to share that recipe).

Hearty Lasagna Soup
from Freezer Meal Swap
Print Recipe
1 1/3 lb ground beef
1/3 cup chopped onion
1 1/2 tsp minced garlic
1/2 tsp dried parsley
4 cups beef broth
1 1/2 cans diced tomatoes
1/2 tsp Italian seasoning
2 cups spiral pasta
1/2 cup grated Parmesan cheese
Cook beef, onion, garlic, and parsley. Add broth, tomatoes, and Italian seasoning and heat to a boil. Stir pasta in saucepan, reduce to medium. Cook 10 minutes or until past is tender. Stir in Cheese.
**To freeze: Freeze soup before adding pasta. Defrost soup overnight. Heat soup. Cook pasta separately. Add to heated soup and then add cheese.

Introducing. . .Pierre
At our house one thing the entire cast of characters dishes out daily is sarcasm/jokes. One of the adult favorites to dish is not giving straight answers when asked, "What are you making/cooking?" Here is the general flow of that conversation.
Child - What are you making?
Adult - Food.
C - What kind of food?
A - The kind you eat.
C - What kind of food you eat?
A - Delicious food.
This will continue on usually until the child gives up. Well last night here is the exchange.
Moo - What's for dinner?
Me - Soup. (I wasn't feeling the sarcasm.)
Moo - Okay.
Later on while we were eating. . .
Moo - So, the soup doesn't have a name?
PE - Yeah, it's Pierre. (He was full of it last night.)
So for the rest of the evening, the soup was referred to as Pierre. The soups real name. . . Cheesy Potato Soup. I served the soup with Brown & Serve Rolls. Those have turned out to be so convenient and delicious I will definitely be keeping my freezer stocked with them or some variation.

Potato Cheese Soup aka Pierre

3 1/2 cups chicken broth
4 potatoes, cubed
2 carrots, shredded
1 onion, diced
1-2 cloves garlic, minced
3 1/2 cups milk
1/2 cup flour
2 cups cheddar cheese, shredded
pepper
Heat the broth to boiling. Add the potatoes, carrots, onion, and garlic. Return to a boil. Reduce heat and simmer for 10 minutes or until vegetables are tender. Combine milk, flour, and pepper. Add to vegetables. Heat to boiling and cook until it starts to thicken. Add cheese and stir until cheese is melted. Serve with additional shredded cheese if desired.
++Truth be told, when we made meatloaf I shredded way too many vegetables so we just used what was left from that--it worked out great.

Good Idea Moo
This week has been pretty low key with the dinners due to finishing up my swap. I am finally finished with everything (including an hour or so at the PO with Bob and McH adding to the fun).
Monday - Salad, Roasted Chicken from Sam's Club
Tuesday - Chicken Soup with Dumplings
Wednesday - Homemade Cheese & Ham Pizza and Breadsticks
Thursday - Ham Fried Rice and Egg Drop Soup (Moo's request)

Egg Drop Soup

Print Recipe
4 cups chicken broth
1/2 cup frozen peas
3/4 cup frozen corn
1/2 tsp ginger
2-4 Tbsp cornstarch
1 cup cold water
2 eggs, beaten
Heat chicken broth to boiling. Add frozen peas and corn; cook 3 minutes or less until peas are warm. Add ginger. Mix cornstarch in cold water, then slowly add to boiling broth until desired consistency of broth is reached. Adding more cornstarch to the cold water mixture may be required for a thicker soup. Add the beaten eggs to boiling broth, stirring quickly and immediately remove from heat.
++The fact that I actually added peas to this is HUGE. The bag of peas currently in my freezer was purchased a month or so ago and it is the FIRST bag of frozen peas I have EVER purchased. . . EVER. I adore fresh peas from the garden. I enjoy peas on my salad when I go out to eat and there is a GOOD salad bar. I tolerate peas in meals prepared for me by other people. I abhor peas in anything from a can and I pick them out. Frozen peas the idea for from the salad bars--sometimes the peas are colder than if they had just been refrigerated.
