We haven't eaten this one yet but I plan on having PE grill it versus cooking it in the oven. Not only because that means I don't have to cook but because what doesn't taste better grilled? (Yeah, yeah smart asses of the world. Hush up.)

Hoisin Glazed Salmon

Print Recipe
1/4 cup orange juice
3 Tbsp hoisin sauce
1 Tbsp honey
coarse salt and freshly ground pepper, to taste
4 salmon steaks
Prop open a large freezer bag and set in a large bowl. Add juice, hoisin, honey and salt and pepper. Using hands on outside of bag, mix well. Add the salmon steaks, seal bag, removing excess air, and make sure salmon is well coated. Using packing tape, affix cooking label to outside of the bag. Place in freezer.
Thaw. Heat broiler. Remove salmon from bag and discard remaining marinade. Place salmon on a rimmed baking sheet. Broil 4 inches from heat 10-15 minutes until fish flakes easily with a fork.

Freezer Meal Swap - December 2012
In December my regular freezer meal group chose not to swap but I still did a mini swap with two friends. Since it was a small swap I figured I could be a little fancier with the meal. I am so happy I did. It was spectacular. Well I thought so anyway. PE didn't care for how lemony it was ("I don't like lemon with my seafood.") but enjoyed it other than that. I will definitely make this again but to please PE's palate I will decrease the lemon.

Baked Shrimp Scampi

2 lbs. (12 to 15 per pound) uncooked shrimp
3 Tbsp good olive oil
2 Tbsp dry white wine
kosher salt and freshly ground black pepper
12 Tbsp (1 1/2 sticks) unsalted butter, at room temperature
4 tsp minced garlic (4 cloves)
1/4 cup minced shallots
3 Tbsp minced fresh parsley leaves
1 tsp minced fresh rosemary leaves
1/4 tsp crushed red pepper flakes
1 tsp grated lemon zest
2 Tbsp freshly squeezed lemon juice
1 extra-large egg yolk
2/3 cup panko (Japanese dried bread flakes)
lemon wedges, for serving
Preheat the oven to 425. If necessary, peel and devein the shrimp, leaving the tails on. Place the shrimp in a mixing bowl and toss gently with the olive oil, wine, 2 teaspoons salt, and 1 teaspoon pepper. Allow to sit at room temperature while you make the butter and garlic mixture. In a small bowl, mash the softened butter with the garlic, shallots, parsley, rosemary, red pepper flakes, lemon zest, lemon juice, egg yolk, panko, 1/2 teaspoon salt, and 1/4 teaspoon of pepper until combined.
Starting from the outer edge of a 14-inch oval gratin dish, arrange the shrimp in a single layer with the tails curling up. Pour the remaining marinade over the shrimp. Spread the butter mixture evenly over the shrimp. Bake for 10 to 12 minutes until hot and bubbly. If you like the top browned, place under a broiler for 1 minute. Serve with lemon wedges.
* To make ahead/freezer meal - Arrange the shrimp in shrimp in a single layer with the tails curling up in a disposable foil baking dish. Pour the remaining marinade over the shrimp. Spread or scatter clumps of the butter mixture evenly over the shrimp. Cover with a double sheet of foil. Label and freeze. To prepare, remove from freezer and allow to thaw. Bake at 425 for 10 to 12 minutes until hot and bubbly. If you like the top browned, place under a broiler for 1 minute. Serve with lemon wedges.

Turkey Meatloaf

Print Recipe
1 lb ground turkey
1 lb pork sausage
2 carrots, diced or shredded
2 potatoes, shredded
1 onion, diced
3-4 garlic cloves
2 eggs
2 cups oatmeal
2-3 cup ketchup or barbecue sauce, divided
Combine ground turkey and sausage. Add carrots, onion, and garlic; stir until combined. Add eggs; combine. Add oatmeal and 1 cup ketchup/barbecue sauce; combine.
Option 1 - Spread in casserole dishes, bread pans, muffin pans, whatever you would like. Bake at 350 for 45 minutes (adjust according to pan) or until almost done. Remove from oven, pour ketchup/barbecue sauce over the top and return to oven until internal temperature reaches 160.
Option 2 - Form into loaf. Place in slow cooker sprayed with cooking spray. Cook on low for 4-6 hours. 30 minutes before serving spread barbecue sauce or ketchup on the meatloaf the final 30 minutes of cooking.

Broiled Tilapia with Thai Coconut Curry Sauce

1 tsp dark sesame oil, divided
1 Tbsp minced peeled fresh ginger
4 garlic cloves, minced
1 cup finely chopped red bell pepper
1 cup chopped scallions
1 tsp curry powder
2 tsp red curry paste
1/2 tsp ground cumin
4 tsp low-sodium soy sauce
1 Tbsp brown sugar
2 tsp Asian fish sauce
1 (14 ounce) can light coconut milk
1/4 cup chopped fresh cilantro
6 (4 ounce) tilapia fillets
salt

Preheat broiler. Heat 1/2 teaspoon oil in a large nonstick skillet over medium heat. Add ginger and garlic; cook 1 minute. Add pepper and scallions; cook 1 minute. Stir in curry powder, curry paste, and cumin; cook 1 minute. Add soy sauce, sugar, Asian fish sauce, and coconut milk; bring to a simmer (do not boil). Remove from heat; stir in cilantro or basil if using. Brush fish with 1/2 teaspoon oil; sprinkle with 1/4 teaspoon salt. Place fish on a baking sheet coated with cooking spray. Freezer Meal Group - November 2011
This month I made Slow Cooker Santa Fe Chicken and Cheesy Salsa Tuna Burgers. I didn't get to make The Slow Cooker Santa Fe Chicken for my family because when I went shopping I remembered that I had chicken in the freezer so I didn't purchase any. Well. . . .I did have chicken but I didn't have quite enough to make a meal for us. I was 1 chicken breast short. I was just happy I had enough for the other meals.
For the Cheesy Salsa Tuna Burgers instead of providing the sesame seed buns I usually do I provided sandwich thins. I love these things! They are so delicious. They are excellent for hamburgers, turkey burgers, sandwiches, bratwursts, etc.

Slow Cooker Santa Fe Chicken

24 oz (1 1/2) lbs chicken breast
14.4 oz can diced tomatoes with mild green chilies
15 oz can black beans
8 oz frozen corn
1/4 cup chopped fresh cilantro
14.4 oz can fat free chicken broth
3 scallions, chopped
1 tsp garlic powder
1 tsp onion powder
1 tsp cumin
1 tsp cayenne pepper (to taste)
salt to taste
Combine chicken broth, beans, corn, tomatoes, cilantro, scallions, garlic powder, onion powder, cumin, cayenne pepper and salt in the slow cooker. Season chicken breast with salt and lay on top. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Adjust salt and seasoning. Serve over rice.

2 5 oz cans of tuna packed in water, drained as much as possible
2 egg
4 wedges of The Laughing Cow Light Creamy Swiss cheese
1/2 cup salsa
1 1/2 cups old fashioned oats, ground up in a blender or food processor
2 tsp onion powder
2 tsp garlic powder
1 tsp dried cumin
1 tsp chili powder
2 tsp dried cilantro
pinch of kosher salt and fresh ground black pepper
dash of hot sauce to taste (optional)
Place all ingredients in a bowl and combine with hands. Heat a non-stick skillet over medium-high heat and spray with non-stick cooking spray. Form the tuna mixture into 6 patties and place directly on hot skillet. Cook for about 3 minutes a side until warmed through and browned. The nutritional info is only for the patty, not my bun or fixins.
For freezing:
Place formed patties on a silicone mat lined tray and flash freeze. Once solid, place in freezer bags. Do NOT thaw. Place frozen patties directly on non-stick skillet sprayed with non-stick cooking spray. Cook for about 6 minutes per side until warmed through and browned.

Recipe Report - March 7
While I have been keeping up with the Weekly Menu, I have not posted many of the recipes. To help resolve this I am going to start another feature. Each Monday I will post a Recipe Report. In the post I will post the recipes from Weekly Menus. I will post five or so recipes each week. To cut down on the length of the post I will only post my review (I use that term very loosely) of the recipes and a link to the Google Doc for the recipe.

This week I am posting more than five recipes because I have a lot of recipes to catch up on.
Lazy Chicken
This was an very easy main dish to make and by lining the pan with aluminum foil, clean up was equally easy. The spices made for very flavorful chicken. It did have a kick to it which meant Bob didn't eat it so next time I will cut down on the chili powder and the pepper.
Bacon & Green Onion Frittata with Smoky Gouda
Oh my goodness. This frittata had a wonderful flavor. First we have smoked gouda. . . delicious! Then there is bacon. Need I say more? My only problem with this was I am not good at making frittatas. I brown the egg a little too much. Other than that it was pretty easy to put together and it had such a great flavor. If you have never tried smoked gouda, I highly recommend you try it ASAP!
Peppery Lemon Brown Sugar Salmon
As with the Lazy Chicken the ease of preparation and clean up of this dish was a big plus. PE also made this so that made it even easier for me. The taste was pretty good. We prefer to cook our fish on the grill but seeing as it isn't grilling season and we don't have a covered deck that wasn't an option. No grill is the main reason I chose a recipe that cooked the fish in the oven. When cooking any fish in the oven I highly recommend using aluminum foil to make the clean up that much easier. I would also recommend tossing it in the outside garbage as soon as you are finished with dinner to help cut down on the fishy smell.
Slow Cooker Chicken in Wine
We have cooked whole chicken in the slow cooker before and it always turns out great. We have found it to be the best method for cooking skinned chickens (what we end up with most often because that is much easier than plucking a chicken). Since the chicken is skinned it loses/doesn't retain the moisture like a chicken with skin so the slow cooking with a little liquid helps it stay moist. I haven't cooked with tarragon before and I have to say it is quite delicious and I will try to find more ways to use it. Next time I will add more salt prior to slow cooking as the addition of it afterward really amped up the flavor.
Poor Man's Lobster
We discovered this recipe several years ago after PE went fishing in Alaska. We had a freezer full of halibut to eat and wanted a little variety. We loved using Spade L Ranch Fish and Seafood Seasoning and grilling the fish but for a little bit of a change we tried this recipe. Moo loved it and had been asking for it ever since. We ate all of that halibut but this past year my brother-in-law and nephew went fishing in Alaska and shared some of their fish with us (Thank you!). Since we had some halibut and again it is not grilling season, I put this on the menu. Moo was thrilled. Even Bob enjoyed it. Of course I think he mainly like dunking it in the butter.

I received some blackberries from the co-op and decided to find a new recipe for using them. (Our favorite has been Quick Blackberry Cobbler served with whipped cream or ice cream.) I also had bananas, some homemade granola, and PE loves peanut butter so it was a no brainer when I found this in my bookmarked recipes. (Have you ever visited Jenny over at Picky Pallet? If not you should. Her recipes are amazing and very creative.) My muffins did not turn out as cute as her muffins but boy were they delicious. The combination of everything was quite fabulous.

I love lemon bars. I love white chocolate. I had a fresh batch of lemons from the co-op and some white chocolate chips in the freezer. It was just meant to be delicious. Boy was it ever. I did add extra lemon juice and zest after tasting the filling and I think that made all the difference. With out the extra tartness I think they would have been too sweet (especially for PE).

I did add extra lemon juice and zest after tasting the filling and I think that made all the difference. With out the extra tartness I think they would have been too sweet (especially for PE).

Two for One Acknowledged
As you all know we (PE and I) really aren't fans of holidays. Pretty much all of them we could live without. That being said, we do have children and we do have tiny sentimental bones in our bodies so we at least acknowledge them. This year for Valentine's Day we acknowledged it by sharing it with Chinese New Year (I don't think I have EVER acknowledged Chinese New Year). I was purely out of coincidence because we (mainly I) wanted to make Asian food for Valentine's Day. PE's way of aknowledging Valentine's Day was to not tell me I was crazy when I listed off the things I wanted to make. He also helped make most items too. For the Day of Red (shorter than Valentine's Day and I am not going to call it VD) we made Pot Stickers (three different recipes), House Lo Mein, House Fried Rice, Chicken Egg Rolls, and Chinese Donuts.
We started out by making the filling for the pot stickers. Then we made egg rolls. While PE fried the egg rolls I started filling the pot stickers. While I continued to fill the pot stickers PE made the lo mein. Then PE started the fried rice while I cooked the pot stickers. We set the oven to Warm and placed the lo mein and egg rolls in there to keep warm while we finished up the pot stickers and fried rice. Since the pot stickers were cooked in batches I also added to a baking sheet in the oven to keep warm.

Pot Stickers

1/2 lb ground pork
1/2 Tbsp sesame oil
1/2 tbsp oil
1-1 1/2 Tbsp water
1/4 tsp salt
1/2 tsp rice vinegar
1/2 tsp chopped ginger
1/4 bundle minced green onion
1/2 Tbsp light soy sauce
1/2 pkg. pot sticker wrappers
about 2-3 cups chicken broth
Combine all ingredients but the pot sticker wrappers in a medium sized bowl and mix by hand. Place 1 heaping teaspoon of pork filling onto each pot sticker wrapper. Moisten edges with water and fold edges over to form a triangle shape while trying to remove air from inside the pot sticker skin. Set dumplings aside until ready to cook. Heat a wok or nonstick skillet until very hot. Add 1 tablespoon vegetable oil, tilting the wok to coat the sides. If using a nonstick skillet, add 1/2 tablespoon vegetable oil. Place 12 dumplings in a single layer in the wok and fry 1 to 2 minutes, or until the bottoms are golden brown. Add 1/2 cup chicken broth. Cover and cook 6 to 7 minutes, or until the broth is absorbed. Repeat with the remaining dumplings.

1/2 pkg. Pot Sticker wrappers (also called gyoza or pot sticker wraps)

2 Tbsp soy sauce
1 Tbsp rice vinegar

In a bowl add shredded cabbage and sprinkle 1 tsp of salt over the cabbage. Let sit for 5 minutes and then squeeze the juice out of the cabbage. Squeeze out any liquid from the shrimp. In the same bowl combine cabbage, shrimp, pork, soy sauce, rice wine, green onions, sesame oil, ginger and garlic. One by one lay out a pot sticker wrapper and add about 2 teaspoons of the cabbage mixture in the center. Lightly wet the other edges of the wrapper with your finger. Bring up both ends and pinch together the top in the middle. What we are doing here is sealing the upper half of the pot sticker. Start at one side and pinch that end closed. In small sections fold the dumpling wrapper skin over on itself until it is fully sealed (or you can just fold it into a half circle). Place pot stickers on a cookie sheet and put in the freezer for 30 minutes to an hour. In a large skillet, heat 1 tablespoon of oil. Add enough dumplings to fill the bottom of the pan and fry for 1 minute or until golden brown on the bottom. Pour ¼ cup of chicken stock into the pan, reduce heat to low, cover and simmer for 7 minutes or until the dumplings are translucent. Uncover and cook on higher heat for about 5 more minutes or until the bottoms are dark brown. Remove from the pan, put on a platter and keep warm. Repeat until all the dumplings are cooked. To make the dipping sauce- Mix all of the dipping sauce ingredients in a bowl and serve with the pot stickers.

1/2 lb ground pork
1/2 lb bag of coleslaw (or 1 lb cabbage finely shredded)
1/2 tbsp fresh ginger, grated or minced
2 cloves garlic, minced
1 tsp sugar
1 Tbsp soy sauce
1/2 Tbsp sesame oil
1/2 pkg of pot stickers
1/4 cup water
1 tsp cornstarch
Before you start making the pot stickers, prepare your workspace. Get out a large baking sheet and moisten a clean kitchen towel or paper towel until just damp. In a small bowl mix together the water and cornstarch. In a large mixing bowl mix together the pork, cabbage, ginger, garlic, sugar, soy sauce and sesame oil until well combined. To begin filling your pot stickers, hold a dumpling wrapper in one hand. Dip your finger in the cornstarch water and moisten all around the outside edge of the wrapper. Place a heaped teaspoon of filling in the middle of the wrapper. Fold the pot sticker wrapper in half and pinch in the middle. To make a pleat, you'll need to make a small fold to the left of the middle. Pinch that together. Make another fold to the left of the pleat you just made and pinch together. Make the same pleats pinching them together on the other side until the dumpling is completely sealed. Your cute little pot sticker is now folded and ready to stand up.... In the palm of your hand or on a hard surface, stand the pot stickers up and tap to make a flat bottom. When you are all done folding and making the potstickers, you could at this point place your whole baking sheet in the freezer. The pot stickers will freeze in about an hour or two and can then be placed in a ziplock bag. This prevents them from freezing into a big potsticker ball. When you are ready to use them, just pull them out of the freezer and add an extra minute or two for cooking time.
Whether cooking these fresh or frozen, get out a large non-stick skillet that has a tight fitting lid. Place a couple teaspoons of oil in the pan and turn the heat up to high. Get a 1/2 cup of water ready and place on the counter beside you. Place the pot stickers in the pan on the flat side with their pleats sticking up. Depending on the size of your pan you should be able to fit about 12 or so into the pan. After about a minute or two the bottoms of the pot stickers will be browned and crispy. Grab the lid to the frying pan in one hand and the 1/2 cup of water in the other. Quickly pour the water into the pan and put the lid on. Turn the heat down to low and set a timer for 10 minutes. The dumplings will finish cooking in the pan by steaming. After 10 minutes remove the lid of the pan. If not all the water is gone let them sit another minute or two to let the water evaporate and let the bottoms of the gyoza get crispy again. Remove to a serving dish. In the Japanese restaurant, they serve them with crispy side up.

Chicken Egg Rolls

1/4 cup Yoshida's sauce
2 eggs beaten
vegetable oil
3-4 green onions, chopped
2 cups shredded cabbage
2 carrots, shredded
1 cup fresh bean sprouts
1/4 cup water
black pepper to taste (we like it peppery so we usually use quite a bit of pepper)
egg roll wrappers
vegetable oil for frying
sweet and sour sauce (optional)
hot mustard (optional)
Cook chicken in Yoshida's sauce until cooked through. When cooked, remove from pan and chop into even smaller pieces. Pour beaten egg into a large, lightly oiled skillet over medium heat. Cook flat and thin, flipping only once, until done. Remove from skillet, cool, and chop finely. In the same skillet, add chopped green onions and stir for about 30 seconds. Add cabbage, carrot and sprouts. Pour water over the cabbage mixture in the skillet. Stir often, until cabbage mixture becomes soft. If it becomes too dry, add more water. Add chicken and egg to mixture. Put about 2 Tbsp of mixture onto each egg roll wrapper and roll up according to package directions. Place egg rolls into heated oil (about 375 degrees) and fry, turning occasionally, until golden brown. Remove from oil and drain on paper towels or rack. Serve with hot mustard and/or sweet and sour sauce.

House Lo Mein

6 oz lo mein noodles
1 Tbsp oyster sauce
2 Tbsp low-sodium soy sauce
1/4 cup chicken broth
pinch red pepper flakes
1/2 Tbsp canola oil
1 medium chicken breast, cut into bite-sized pieces
1 pork loin chop, cut into bite-sized pieces
1/2 lb shrimp, peeled and deveined
1/2 small onion, chopped
1 bell pepper, seeded and sliced thin
1 cup snow peas
3 cloves garlic, minced
1 tsp sesame oil
Bring a pot of water to boil. Cook the lo mein noodles according to the package directions. Drain and set aside. In the meantime, make the sauce by combining the oyster sauce, soy sauce, chicken broth and red pepper flakes in a small bowl. Whisk well and set aside. Heat the canola oil in a large nonstick skillet or wok over medium-high heat. Add the chicken to the pan and cook until browned and cooked through. Add in the vegetables, each a few minutes apart, starting with the onion and bell pepper and ending with the mushrooms. Cook just until tender-crisp. Add in the garlic and saute just until fragrant, about 1 minute. Add the sauce to the pan, and then the cooked lo mein noodles. Toss the mixture well to coat everything. Drizzle with the sesame oil and toss once more. Serve immediately.

Short-Cut Chinese Donuts

Heat enough oil in a deep pan to completely submerge biscuits. Heat the oil to approximately 350 degrees. Drop the biscuits into the oil and fry until lightly browned, turning midway through the cooking time. Drain on a rack or brown paper bag for 1-2 minutes and then roll around in white sugar. These can be eaten as they are normally served, with sugar, or they can be served with honey drizzled over the top. Another way to enjoy them is topped with a favorite preserve or jelly.
**I found that placing them in the microwave for 10 seconds before putting them in the oil made for a fluffier donut.

Random Sharing
Below are two great recipes that we have made in the past. The Crisp Bean Burritos are a quick and easy lunch or dinner idea. I love the Blackened Salmon! It reminds me of the Blackened Salmon we sometimes purchase at Sam's Club. Cook up some of the salmon and make your own fish tacos. A favorite combination in our family is to serve the blackened salmon in (or along side) tortillas with spinach and/or romaine lettuce, croutons, shredded Parmesan cheese, and Cesar dressing (this is a favorite in our house).

Blackened Salmon

4 salmon fillets, ~1/2 inch thick
3 1/2 Tbsp butter
juice of one lemon
2 1/2 Tbsp paprika
3/4 tsp cayenne pepper
1/4 tsp ground thyme
1/2 tsp garlic powder
1 1/2 tsp kosher salt
1 tsp fresh ground black pepper, or course ground
Melt butter in an oven safe skillet, add lemon juice. Mix all seasonings together in a bowl. Dip each salmon fillet (both sides) in the butter and lemon juice. Dip both sides in seasoning until well coated. Cook the salmon fillet for about 2 minutes per side in the skillet, until blackened. Remove salmon and place on a plate. Repeat with the remaining salmon until all are blackened. Place the salmon fillets back in the skillet. Bake at 400 for approx. 8 minutes, until cooked through.

Melt butter in an oven safe skillet, add lemon juice. Mix all seasonings together in a bowl. Dip each salmon fillet (both sides) in the butter and lemon juice. Dip both sides in seasoning until well coated. Cook the salmon fillet for about 2 minutes per side in the skillet, until blackened. Remove salmon and place on a plate. Repeat with the remaining salmon until all are blackened. Place the salmon fillets back in the skillet. Bake at 400 for approx. 8 minutes, until cooked through.

What Was Wrong With Last Week?!?
(That title would have been so much cooler if I had put "Wast" instead of "Last" but I just couldn't do it. Sounds too much like baby talk.)
So last week was a little off for me but even with fewer meals cooked I still have some recipes for you.
Here is how the week went as far as our meals:
Monday -- I can't recall what we had for dinner but I believe Moo made Chocolate Puddle Bottoms Up Cake (recipe in a later post) and I made whipped cream (recipe in a later post)
Tuesday -- migraine, I ate bread with butter and honey, PE ate Shrimp Scampi (recipe below), I was sleeping and have no idea what the kids ate (such a good mom)
Wednesday -- Smoked Swiss and Onion cheese spread with Ritz crackers and pumpkin chocolate chip bread from bakery (so healthy)
Thursday -- Peanut Butter and honey/jelly sandwiches and pumpkin chocolate chip bread (again, so healthy)
Friday -- Stroganoff Sauce with steamed brocolli
Saturday (Lunch) -- Cheeseburger Soup (freezer swap meal) with Brown and Serve Rolls and Apple Crisp (recipe in a later post) for dessert
Saturday (Dinner) -- Leftover Shrimp Scampi and Arizona Sugar Cookies (recipe below) that was our big date night for the week as the kids were over at Auntie Cooking W. having their annual pumpkin carving/cookie decorating party. (One of the many reasons I admire my sister. She can have all the kids together and not go crazy.)
Sunday -- One Pot Dinner (recipe below) and Cheddar Cheese Bread (recipe below)
Tonight or tomorrow I am going to try throwing something together (this is a big step for me). I have enchilada sauce and black beans that I took out of the freezer for another recipe and that fell through so I need to get them used. It is going to involve making homemade tortillas so I will let you know how it all goes and what I will try to pay attention to what I do so I can share a recipe.

Cheeseburger Soup

1 lb ground beef
1 onion, diced
3/4 cup shredded carrot
3/4 cup chopped celery
1 tsp dried parsley
3 cups chicken broth
4 cups potatoes, cubed
1/4 cup all-purpose flour
2 cups cheddar cheese, cubed
1 1/2 cups milk
4 tablespoons butter or margarine
In a large pot, brown ground beef and onion. Add broth, celery, carrots, parsley and potatoes. Bring to a boil, and then simmer until potatoes are tender, about 10-12 minutes. In a saucepan, melt the butter and stir in flour. Add the milk, stirring until smooth. Gradually add milk mixture to the soup, stirring constantly. Bring to a boil and reduce heat to simmer. Stir in cheese; continue to stir until cheese is melted then serve or freeze. Do not boil.
**To serve from frozen: Defrost in refrigerator overnight. Place in pot and heat on medium heat until warmed through. Do not boil.

One Pot Dinner

1/2 cup brown sugar
1 Tbsp dry mustard
2 cans pork and beans
1 can kidney beans
1 can butter beans
1 lb hamburger
1/2 - 1 cup ketchup
1 – 3 Tbsp vinegar
1 Tbsp liquid smoke
Brown bacon, onion, and hamburger; add remaining ingredients and simmer for 1 hour OR cook in slow cooker on low 4 -5 hours.
++Prior to this week I have never made this on the stove. It turned out just as good. I bet it will taste even better as leftovers though.

Cheddar Cheese Bread

1/4 tsp cayenne pepper
1/8 tsp black pepper
4 oz of cheddar cheese, cut into 1/2 inch cubes
1 1/4 cups milk
3/4 cup sour cream
3 Tbsp butter melted
1 egg, lightly beaten
Heat oven to 350. Generously grease a 9×5 loaf pan with oil. In a bowl whisk together flour, baking powder, salt, cayenne pepper, and black pepper. Carefully stir in cheese cubes until cheese is well coated. In a separate bowl whisk together the remaining ingredients. Fold the milk mixture into the flour/cheese mixture. Stir just until combined, do not over stir. The mixture will be thick. Pour/spread into greased loaf pan. Bake for 45-50 minutes. Let cool 10 minutes, scrape around edges with a knife, and then remove from pan. Let cool one hour before slicing and serving.
++This was a great addition to the One Pot Dinner. It has a slight biscuit flavor to it. I think next time I might add some garlic salt or onion salt to it. (I say that like I know what I am talking about. I know it was missing something and I figure onion/garlic salt more often than not make food better.)

olive oil
garlic, minced (a lot)
butter(some)
whipping cream (some)
grated Parmesan cheese (some)
grated parmigiano reggiano (some)
Heat olive oil in medium sauce pan. Add garlic and saute until tender and fragrant. Add some butter and some whipping cream. Stirring continuously add cheeses and stir until creamy. Add shrimp and cook until shrimp are pink. Serve over spaghetti or angel hair pasta.
For leftovers, heat on medium heat in microwave stirring frequently. Add extra cheese including shredded asiago.
++You have to love how PE gives me measurements for his recipes. The only thing that matters is that it tasted delicious. I hope you can replicate it in one form or another because you are missing out if you don't try.

Arizona Sugar Cookies

1/2 cup shortening
1/2 cup butter
1/2 cup sugar
1/2 cup brown sugar

2 - 3 cups flour
1/2 tsp baking soda
1 tsp cream of tarter
1/2 tsp salt
Combine shortening, butter, and sugars. Add egg and vanilla. Mix in dry ingredients. Roll into 1 inch balls and roll in sugar. Bake at 350° for 10 minutes or until lightly browned.
++PE adds extra flour until it reaches the "right" consistency. Which (according to PE) can only be reached by mixing it by hand. I usually add 2 cups and call it good that is why PE makes the cookies more often than I.

Mmmm Shrimp Jambalaya
Now as you read the first part of the title make sure you picture Homer Simpson when he says, "Mmmm . . ."
PE and I are sans children this evening so we decided to make this Shrimp Jambalaya that we knew those stinks wouldn't enjoy. Bob would look at it then possibly smell it and say, "Ew, I don't like that." Granted he doesn't know but if he did decide to eat some sausage or chicken he would most likely spit it out because it "made his lips hurt" because it was spicy. Then Moo would turn her nose up at it because it has shrimp and it is spicy. Bug might have eaten it but he isn't here this week anyway so that is a moot point.
I must preface my opinion of the jambalaya with this - I have never had authentic jambalaya and PE doesn't remember what it tasted like because his Louisiana trip was so long ago. That said, this was AMAZING!! The list of ingredients is lengthy but it all came together pretty quickly.
Shrimp Jambalaya

1/2 cup chopped onion
1/2 tsp finely chopped garlic
1/2 cup uncooked long-grain rice
1 cup water
1 cup cooked chicken, cubed
1 can (16 oz) tomatoes with liquid
1/2 pound smoked sausage, cut into 1/4 inch slices
1 1/2 tsp chicken bouillon granules
1/2 tsp paprika
1/8 tsp thyme
1/8 tsp cayenne pepper
1/8 tsp black pepper
1 small bay leaf
1/2 pound fresh or frozen raw Shrimp, shelled, deveined and rinsed
hot pepper sauce
Melt butter or margarine in a 3 quart saucepan; add celery bell pepper, onion, and garlic. Cook, stirring occasionally, over medium heat, until vegetables are tender (4-6 minutes). Stir in rice, chicken, water, tomatoes with liquid, sausage, bouillon granules, paprika, thyme, cayenne pepper, black pepper, and bay leaf. Over high heat, cook until mixture comes to a full boil. Reduce heat to low, cover, and continue cooking, stirring occasionally, until rice is tender (20 -25 minutes). Add shrimp; continue cooking until shrimp is pink (4-5 minutes). Remove bay leaf. Serve with hot pepper sauce. Serves 6.
