Beethoven Was Wrong . . .

when he said, "Only the pure of heart can make good soup." I make some pretty darn good soup (Clam Chowder counts as a soup, right? I kick some serious butt with this Clam Chowder recipe) so I have disproved that saying.

Side note: It is a might sad how far I will go to get a title. Oft times a song title or lyrics from a song inspire me but for soup. . . I had nothing. So I went looking for some quotes and as soon as I saw the one above I was inspired. Maybe that is the sad part.

I have a soup recipe from the Freezer Meal Swap that I have had in my Google Docs file since the beginning of February. It is White Chili I (I have another White Chili recipe I will post some other time and that will end up being White Chili II as if you couldn't have guessed).

The soup was good; it was a nice change from the soups in my regular recipe collection.

White Chili I
from Freezer Meal Group
Print Recipe

1 onion, chopped
2 cloves garlic or garlic salt
1/4 tsp pepper
1/4 tsp red pepper
1 tsp cumin
2 chicken breasts, cooked & shredded
3 cans northern white beans
1 can garbanzo beans
2 cans white or yellow corn
1 can chopped green chilies
1-2 cans chicken broth

Mix everything and heat for 30 minutes. Garnish with mozzarella cheese and sour cream.

From frozen: Defrost overnight. Heat in pot until warm. Serve with mozzarella cheese and sour cream.
