Freezer Meal Group - February

I also forgot to post February's freezer meal so here it is.

Sausage Cheese Quesadillas

1/2 lb pork sausage (breakfast bulk)
1 cup cheddar cheese, shredded
6 flour tortillas (6 inch)
1 rib celery, chopped
1/4 onion, chopped
1 carrot, grated
sour cream
salsa

Fry sausage until browned and crumble into small pieces. Remove sausage from pan and set aside. Saute celery, onion, and carrot in the pan used to cook the sausage. Once celery, onion, and carrot are cooked to desired tenderness add sausage to pan and combine. Spray 1 tortilla with cooking spray and place sprayed side down on heated griddle. Place sausage mixture on tortilla. Sprinkle cheese on top of sausage mixture. Place another tortilla on top and spray the top with cooking spray. Cook for 2-3 minutes and flip. Cook until cheese is melted and tortillas are lightly browned. Serve with sour cream and salsa while hot.

Frozen: Freeze once assembled. The warm sausage mixture topped with the cheese will help the quesadillas stay together. Remove from freezer 30 minutes prior to cooking. Spray tortilla with cooking spray and place sprayed side down on heated griddle. Spray top tortilla with cooking spray. Cook for 2-3 minutes and flip. Cook until cheese is melted and tortillas are lightly browned.
