Last night PE and I went for a drive and while we were gone Moo made us dessert. Delicious! I love the peanut butter, chocolate, and butterscotch combination. I need to do more with those three.

Peanut Butter Bars with Mixed Chip Topping

1 pouch Peanut Butter Cookie Mix (Betty Crocker or other)
3 Tbsp oil
1 Tbsp water
1 egg
1/2 - 3/4 cup peanut butter chips
2 cups chocolate/butterscotch/peanut butter chips (any combination)
Combine cookie mix, oil, water, egg, and peanut butter chips until a soft dough is formed. Spay the bottom of a 9x13 with non-stick spray. Spread dough in bottom of pan. Bake at 350 for 15-18 minutes or until edges are light golden brown. Cool 10 minutes. In a microwavable bowl heat chips on high for 1 to 1 1/2 minutes or until melted. Spread evenly over peanut butter base. Refrigerate for 30 minutes or until set. Cut into bars and serve.
