Rainbow's End and Ribs - Low and Slow

As mentioned in this post Rainbow was not pulling her weight and laying eggs. So a few weeks ago PE decided it was time to put an end to Rainbow. I didn't really know what he was planning until Moo came in the house and said, "Dad is killing Rainbow." Hmmm, who knew? I don't have a play-by-play of Rainbow's end because he did it so quickly and I was busy when he did it so I don't really know what went on other than he did it with an axe and he skinned it so he wouldn't have to deal with the plucking.

Oh, there is one more thing. The bird was delicious! PE tried his hand at low and slow grilling and cooked her on the grill for a couple of hours. Mmmm, mmmm. He rubbed the bird salt and pepper and then basted it with Barbecue Sauce II as it cooked. It was a little tough but the flavor was fabulous.

Since he had a little practice and wanted to work on perfecting his low and slow technique, the next evening PE grilled some pork ribs (from one of our pigs). He rubbed them with Secret Rib Rub and basted them with Barbecue Sauce II. They did not end up being fall off the bone but boy were they tasty. I wished there were more when we were finished and I am NOT a rib lover UNLESS they are fall off the bone. I don't like getting my fingers all dirty with sauce and then the whole chewing meat off bone thing isn't the best visual either but with those, I just couldn't help it.
