Just to show how menu plans work. . .it took me almost four days to use any of the recipes from the recipes I chose. Thursday night we had ribs with steamed green beans. Friday we had extra kids so we at breakfast for dinner (pancakes and eggs). Finally, Saturday night Moo helped me make Spicy Shepherd's Pie. It was quite tasty--a new twist on a family favorite.
I spent most of the day working on cards. I told myself I had to complete 6 sets before I could do anything with the grapes. During the course of the day I had Moo wash and remove stems from two bowls of grapes. From the two bowls I made 6 jars of freezer grape jelly and had about two cups of grape juice concentrate left over. Yummy!

Spicy Shepherd's Pie
from What's for Dinner

1 lb. lean ground beef
1/2 onion, chopped
1 can black beans, drained
1 can diced tomatoes
1 can corn (sodium free)
1 packet low sodium taco seasoning
1 tsp chili powder
1 garlic clove, minced
4 cups mashed potatoes
1 cup grated cheese
Brown ground beef with onion; add all ingredients except potatoes and cheese. Simmer for 2-3 minutes. Pour into a 9x13 pan. Spread mashed potatoes over the meat mixture. Top with cheese. Bake at 350 for about 25-30 minutes or till hot and bubbly.
