Even the Best Laid Plans

Evidently when you make gnocchi, you need to either cook it or freeze it. Do not store it in the refrigerator for three or four days. Good to know. Too bad I didn't know/realize that before I ruined half of the gnocchi I made. Downside, I ruined half a batch of gnocchi and I will not be sharing the Gnocchi with Summer Vegetables recipe with you at this time. Upside, I was able to make a different wonderfully delicious meal. . .

Baked Spaghetti

I heated the oven to 375. I cooked some spaghetti and heated the leftover meat sauce from the weekend. Once the spaghetti was finished I stirred in some olive oil and Parmesan cheese. I spread the spaghetti mix in a 9 x 13 pan sprayed with cooking spray and topped it with cheese. Placed it in the oven and baked it for 30 minutes. DELICIOUS!!!

I highly recommend making this as an alternative to regular spaghetti next time you have it on the menu.

On a non-food related note. . . I have to give a shout out for a new fall show, Glee. If you do not know what it is you can watch the director's cut pilot here. The music is good, it is a show that you can watch with the kids, sort of cheesy but funny too (I love the Cheerios'--cheerleading team--coach.) Just a recommendation. The other great thing about it, it is on after So You Think You Can Dance. I have high hopes that this season will be better than last.

  1. Okay, the baked spaghetti is right up my alley. I totally wouldn't have thought to stir in olive oil, though, so thanks for an awesome tip.
